Il s&rsquo;agit d&rsquo;un ingr\u00e9dient tr\u00e8s populaire qui a toujours \u00e9t\u00e9 pr\u00e9sent dans la cuisine populaire et dans de nombreuses recettes.<br><br><\/p>\n\n\n\n<p>Parmi les nombreuses vari\u00e9t\u00e9s existantes, le plat de riz pr\u00e9f\u00e9r\u00e9 des Italiens est le risotto : un riz \u00e0 forte teneur en amidon qui est lib\u00e9r\u00e9 pendant la cuisson et en le remuant continuellement (appel\u00e9 mantecatura) et qui lui donne son aspect cr\u00e9meux. L&rsquo;amidon joue deux r\u00f4les : il rend la texture du riz cr\u00e9meuse et velout\u00e9e et retient les saveurs ajout\u00e9es par les ingr\u00e9dients qui accompagnent souvent ce plat et qui sont caract\u00e9ristiques du plat de risotto, comme le potiron.<br><br><\/p>\n\n\n\n<p>Le risotto au potiron est un plat traditionnel consomm\u00e9 principalement en hiver, lorsque d\u2019autres l\u00e9gumes sont moins disponibles : le potiron est en effet bien adapt\u00e9 pour \u00eatre conserv\u00e9 tout au long de l&rsquo;hiver.\u00a0 Aujourd&rsquo;hui, nous voulons partager la recette familiale de notre agriculteur italien Andrea, dont le p\u00e8re a cr\u00e9\u00e9 une version avec du vinaigre balsamique.<br><br><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/Risotto-FR-1024x914.png\" alt=\"\" class=\"wp-image-17121\"\/><\/figure>\n\n\n\n<p><br><br>Vous pouvez trouver (presque) tous les ingr\u00e9dients pour le risotto <a href=\"https:\/\/www.crowdfarming.com\/fr\/farmer\/azienda-agricola-iotti-andrea\/up\/adopter-un-champ-de-potirons-de-azienda-agricola-iotti-andrea\/overharvest\">ici<\/a>.<br><br><\/p>\n\n\n\n<p><strong>Pr\u00e9paration<\/strong>:<br><br><\/p>\n\n\n\n<p>La premi\u00e8re \u00e9tape consiste \u00e0 pr\u00e9parer le bouillon de l\u00e9gumes qui sera utilis\u00e9 pour la cuisson du riz. Si vous manquez de temps, vous pouvez \u00e9galement sauter cette \u00e9tape et utiliser un bouillon de l\u00e9gumes d\u00e9j\u00e0 pr\u00e9par\u00e9 ou un cube de bouillon de l\u00e9gumes.<br><br><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dans une grande casserole, mettez deux carottes, le c\u00e9leri et un petit oignon dor\u00e9, ajoutez 1 cuill\u00e8re \u00e0 soupe de sel et environ 750 ml d&rsquo;eau et faites bouillir pendant au moins 30 minutes.<\/li><li>Pendant ce temps, nettoyez le potiron et coupez-le en cubes de 1 cm de c\u00f4t\u00e9.&nbsp;<\/li><li>Faites chauffer 30 g de beurre dans une po\u00eale moyenne, id\u00e9alement une po\u00eale anti-adh\u00e9rente. Versez ensuite le riz dessus et faites-le griller \u00e0 feu vif pendant 1 \u00e0 2 minutes en le remuant.&nbsp;<\/li><li>Une fois le riz grill\u00e9, commencez \u00e0 ajouter suffisamment de bouillon pour le couvrir et baissez le feu.&nbsp;<\/li><li>Apr\u00e8s environ 4 minutes, ajoutez les morceaux de potiron et laissez-les cuire pendant 10-12 minutes, tout en ajoutant petit \u00e0 petit de nouvelles louches de bouillon au fur et \u00e0 mesure que la quantit\u00e9 pr\u00e9c\u00e9dente est absorb\u00e9e.
