But in this seasonal twist, we use freshly harvested courgettes to create light and flavourful fritters, combined with creamy brie, garlic, and herbs. Sprinkle generously with salt and let sit for 1 hour to release excess moisture.<\/li>\r\n<li>Meanwhile, grate (or break into small bits) the brie, finely chop the garlic, and roughly chop the parsley.<\/li>\r\n<li>After an hour, transfer the courgettes to a clean tea towel and squeeze out as much liquid as possible.<\/li>\r\n<li>In a large bowl, combine the courgettes, brie, garlic, parsley, eggs, and flour. Season with pepper (and a little extra salt if needed). Mix well until combined.<\/li>\r\n<li>Heat olive oil in a frying pan over medium heat. Add 2 tablespoons of mixture per r\u00f6sti, pressing gently to flatten into a round.<\/li>\r\n<li>Cook for 2\u20133 minutes on each side until golden and crispy. Transfer to a plate lined with kitchen paper.<\/li>\r\n<li>Repeat with remaining mixture.
