They would like to share one of their favourite recipes with you. <br><br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients for the cake<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>220 g flour<\/li><li>30 g white sugar<\/li><li>90 g brown sugar<\/li><li>2 tbsp baking powder<\/li><li>optionally 2 tbsp cocoa powder<\/li><li>130 g + 30 g butter (or vegan alternative)<\/li><li>3 eggs separated (or vegan alternative)<\/li><li>150 g <a href=\"https:\/\/www.crowdfarming.com\/en\/farmer\/crayfish-bay-organics\/up\/adopt-a-cocoa-tree-crayfish-bay-organics\/overharvest\">Crayfish Bay Organics 75% chocolate<\/a><\/li><li>Spice mix (to taste) &#8211; ground cinnamon, cardamom, cloves, allspice seeds, nutmeg<\/li><li>Orange zest<br><br><\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients for the rum &amp; sultana mixture<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>140 g sultanas<\/li><li>30 g dried plums<\/li><li>30 g currants<\/li><li>80 ml dark rum<br><br><\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients for the ganache<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>200 ml sweet cream (or vegan alternative)<\/li><li>200 g <a href=\"https:\/\/www.crowdfarming.com\/en\/farmer\/crayfish-bay-organics\/up\/adopt-a-cocoa-tree-crayfish-bay-organics\/overharvest\">Crayfish Bay Organics 75% chocolate<\/a><br><br><\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/CrayfishIngredients.png\" alt=\"\" class=\"wp-image-21254\"\/><\/figure>\n\n\n\n<p><br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Preparation of cake<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>\u00a0Grind the dried fruit with a food processor. Add the rum and leave to infuse for at least 1 hour.<\/li><li>\u00a0Preheat oven to 170 \u00b0C (\u2248 340 \u00b0F).<\/li><li>Melt 130 g butter and leave to cool.<\/li><li>Melt 30 g butter + 150 g Crayfish Bay Organics 75% chocolate and leave to cool.<\/li><li>Sift together flour, baking powder, cocoa powder and spice mix.<\/li><li>Cream together the butter, sugar and orange zest.<\/li><li>Add egg yolks one at a time and beat until creamy.<\/li><li>Add rum-dry fruit mixture and then butter-chocolate mixture and mix well.<\/li><li>Slowly stir in dry ingredients with a pastry spoon.<\/li><li>Beat egg whites until stiff and slowly stir in.<\/li><li>Pour the cake mixture into a loaf tin and bake in the preheated oven for about 35 minutes.\u00a0\u00a0<br><br><\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Preparation of ganache<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Chop 200 g chocolate into small pieces.<\/li><li>Bring the sweet cream to the boil and pour over the chocolate pieces.<\/li><li>Stir until the chocolate pieces have melted.
