In Spain, mangoes are usually harvested between September and November, but this year the season is not only starting earlier but also ending earlier, in October. \u201cThis season has been anything but ordinary. Due to high temperatures and early ripening, we started harvesting a month and a half earlier than usual; we&#8217;ve never picked Osteen mangoes in mid-August before!\u201d shares Mar\u00eda from <a href=\"https:\/\/www.crowdfarming.com\/en\/farmer\/finca-los-pepones\/up\/adopta-un-arbol-de-mango-finca-los-pepones\">Finca Los Pepones. <\/a><br><br><\/p>\n\n\n\n<p>Today, we bring you three recipes to make the most of our mangoes that are already ripe for harvesting, so you can enjoy them at any time of the day while they are in season, through flavours that take us back to the origins of this fruit. The mango, originally from South Asia, began to be cultivated on a large scale in a small strip of the southern European coastline in the late 20th century. This is where our <em><a href=\"https:\/\/www.crowdfarming.com\/blog\/fr\/que-signifie-tropiterranean-2\/\">Tropiterranean <\/a><\/em>mangoes come from &#8211; mangoes cultivated in Southern Europe, in lands bathed by the Mediterranean \u2014, which should be distinguished from mangoes imported from more distant territories. <br><br><\/p>\n\n\n\n<p>Before we begin, you just have to decide which variety of mango you will use for each of these recipes! As we saw in a recent post, European mangoes offer a <a href=\"https:\/\/www.crowdfarming.com\/blog\/fr\/principales-varietes-de-mangues-cultivees-en-europe\/\">wide range of varieties<\/a> \u2013 up to more than 10. The most adopted variety in CrowdFarming is Osteen (200 \u2013 400 grams) or Keitt (400 \u2013 700 grams), both delicious. For these recipes, we used these varieties from <a href=\"https:\/\/www.crowdfarming.com\/es\/farmer\/finca-refijo\/up\/adopta-un-arbol-de-mango-finca-refijo\/overharvest\">Refijo farm <\/a>(approximately 450 grams each mango), cultivated by our producer, Paco Marin. <br><br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Mango Lassi (or Mango Smoothie)<\/strong> <br><br><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/smoothie_rez.png\" alt=\"\" class=\"wp-image-20187\"\/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><br><br>Ingredients (for 2 glasses) <br><br><\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>1 mango<\/li><li>1 yogurt<\/li><li>3 empty yogurt containers of milk (add more milk for a smoother texture)<\/li><li>1 teaspoon of honey<\/li><li>Optional: One cardamom seed<br><br><\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Peel and cut the mango into large pieces.<\/li><li>In a blender, add the mango pieces and the rest of the ingredients.<\/li><li>Optionally, if you want a more authentic-style smoothie \u2013 a mango lassi, add the cardamom when blending.<\/li><li>Blend until smooth and creamy.<\/li><li>Serve chilled. <br><br><\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Mango Curry<\/strong><br><br><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/curry_rez.png\" alt=\"\" class=\"wp-image-20194\"\/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><br><br>Ingredients (for 4 servings) <br><br><\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>2 mangos<\/li><li>2 medium onions<\/li><li>2 long green peppers<\/li><li>4 cloves of garlic<\/li><li>A small piece of ginger<\/li><li>1 jar of precooked chickpeas (400 g)<\/li><li>1 can of coconut milk<\/li><li>1 teaspoon of curry<\/li><li>1\/2 teaspoon of turmeric<\/li><li>1 teaspoon of garam masala<\/li><li>Some cumin seeds<\/li><li>Extra virgin olive oil<\/li><li>Salt and pepper<br><br><\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">To serve <br><br><\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>240 g of white rice<\/li><li>Coriander leaves<br><br><\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Peel the onions, garlic cloves, and ginger. Finely chop the onions, ginger, and green peppers, then set aside.<\/li><li>Peel and cut the mangos into large pieces.<\/li><li>In a Dutch oven or large pot over medium heat, add a generous drizzle of olive oil.&nbsp;<\/li><li>Add the onions, green peppers, ginger, and whole garlic cloves and cook for a few minutes. <\/li><li>Add the spices to the mixture, season with salt and pepper, and saut\u00e9 for an additional 2 minutes.<\/li><li>Add the mango pieces and cook for 5 minutes until you have a jam-like texture. Then, add the coconut milk and the drained chickpeas. Simmer for another 5 minutes.<\/li><li>Serve with rice and some coriander leaves.  <br><br><\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Mango Carpaccio<\/strong> <br><br><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/carpaccio_rez.png\" alt=\"\" class=\"wp-image-20201\"\/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><br><br>Ingredients (for 4 servings)<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>2 mangos<\/li><li>1 yellow lemon<\/li><li>1 red onion<\/li><li>2 tomatoes<\/li><li>1 cucumber<\/li><li>1 teaspoon of sumac<\/li><li>Extra virgin olive oil<\/li><li>Salt and pepper <br><br><\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Peel and finely cut the mangos, the onion, and the cucumber, then finely cut the tomato.<\/li><li>In a bowl, add the mangos, sumac, lemon juice, and a drizzle of olive oil.
