You adopt 10m² of mixed orchard from our farm in Todorovo (Bulgarien). The cultivation here is certified as organic by the European Union as of 2021. You are adopting a piece of biological diversity. In our gardens we grow over 80 kinds of fruits and vegetables. Most of them are grown extensively (meaning that we leave space for nature between them) and as polycultures (we plant different fruits and vegetables together). Among the crops we grow are apples, plums, quince, cherries, sour cherries, mulberries, medlars, currants, aronia berries, Japanese quince, Jerusalem artichokes, cherry tomatoes, green beans and Einkorn, an ancient grain. We have carefully chosen new and old varieties that are not only particularly flavourful, but also highly resilient against diseases. For the apples, for instance, these include varieties such as Rewena, Topaz, Boskoop, Reglindis, Florina, Hilde, Aivania, Karastoyanka and Seestermüher Zitronenapfel. Between our fruit trees we have planted shrubs and herbs that fulfil important functions for the health and well-being of the orchards. For example, crab apples. These wild relatives of apples bloom very early in spring and support pollination. Sea buckthorn and comfrey, in turn, can capture nitrogen from the atmosphere and make this important fertiliser available to other plants around them. Fennel, apart from being healthy and aromatic, provides a breeding ground for wasps and butterflies, which in turn keep pests in check and pollinate our orchards. Savory, thyme and many other herbs planted between our fruit trees play similar roles. Our gardens provide a safe space for numerous insects, which allows for a balance between beneficial and harmful creatures. This almost entirely eliminates the need for plant protection measures. In addition, the high level of diversity reduces the risk of uncontrollable disease and pest outbreaks, as is often the case in monocultures. Between the tree rows we sow the ancient grain Einkorn and other annual crops. After the harvest, we use the straw, as well as wool from neighbouring farms, to mulch. This means that we place a “wreath” of straw and wool around each tree in order to reduce evaporation, suppress weeds and fertilise the trees. Our efforts to promote natural and cultural diversity on our farm is one of the reasons why we have been awarded the second prize in an EU competition for 'Bulgaria’s most modern farm'. At the same time, however, this diversity also means that we have a little bit of everything - and few crops in larger quantities. Our trees are still young, and accordingly do not bear many fruits yet. In addition, every processed product requires a large amount of paperwork, individual analyses and labels and of course specific know-how. Hence, we focus on two kinds of fruit spreads for now: ‘100% plum’ and ‘apple, plum and ginger’. For them, in addition to our own harvest, we use fruits from selected colleagues in our region, such as plums from Nikolai, who has an organic plum orchard next to us (and makes work compost for us on our land). We harvest all the fruits we use ourselves, even those from our colleagues, to make sure that they are harvested exactly at the right moment. By the way, plums have a long tradition in our region: They are used to make brandy and 'pestil' - a fruit leather, that is produced through a long and slow process of cooking and thickening, without adding sugar. Following this tradition, we make our fruit spreads from fully ripened fruits that are not only naturally sweet, but also pleasantly tangy and very aromatic. Each mixed orchard produces an average of 5kg of organic fruit spread per season.
Each season we will send you a box with: 3 x __Organic plum spread__ (330g each, screw-top jar) 3 x__ Organic apple-plum-ginger spread__ (330g each, screw-top jar) We process our hand-picked apples and plums largely manually in our small factory: we remove the pits and seeds, mash them into small pieces and then slowly cook them down on low heat, while continuously stirring (we have a small machine for that). This process of thickening takes about 20 hours. Every jar of fruit spread contains about 1,5kg of fruit. In the case of the apple, plum and ginger spread, we add a little bit of freshly squeezed ginger juice towards the end of the cooking process. We do not add neither sugar, nor preservatives or other additives. The spreads are sweetened only by the natural fruit sugars contained in the sun-ripened fruits. After filling the fruit spread into jars, we sterilise the jars in hot water. This makes them last for at least two years. Once opened, you should keep the spreads in the fridge and consume them within three days. The fruit spreads can be consumed with bread, pancakes or as a filling for all kinds of pastry. The apples and plums are harvested between September and October. First we make the plum spread, in September. In October and November we make the apple-plum-ginger spread, as some of the apples need to be stored for up to two months to develop their full flavour. That is why we freeze part of the plums, so that we can process them later on together with the apples. From the end of November all spreads are ready for delivery.
