You adopt 4m² of a tomato field from our farm in Siracusa (Italien). The cultivation has been certified as organic by the European Union since 2019. We are also already in the process of converting to Demeter and expect to be officially certified by 2022. The peculiar climate among sun, sea and volcano makes it suitable for growing vegetables such as tomatoes. One of the great advantages of the area in which we are located consists of very high temperatures, especially in summer, and direct exposure to the sun. It makes it possible to perfectly ripen our vegetables without having to use greenhouses that cause the disfiguring of the local landscape that in many areas consists of nature reserves or protected areas. The sea breeze mitigates the climate and stabilizes the humidity in the territory.The last touch is given by one of the most peculiar elements of Europe, the Etna volcano. With its eruptions and thanks to the wind, one of the most natural fertilizers that exists is transported and released on our soils: volcanic sand, which has very high quantities of phosphorus and potassium. In the past, the tomato was considered only for ornamental and inedible use. The name "tomato" is attributed to Mattioli who called it "golden apple". The beginning of its cultivation in the Mediterranean countries dates back to the beginning of the century XIX, when it also reached Sicily. On your plot we grow different tomato varieties which we would like to share with you: The cherry tomato is one of the finest sicilian tomatoes. It has found in the south-east of Sicily the perfect conditions to grow thanks to the “lava” soil. It has a “cherry” appearance with round, small and deep red fruits. The “datterino” tomato is of Asian origin and has recently entered the Italian market. Sicily is the perfect area for this product that has found the best features to maximize its qualities thanks to the soil, the climate, the solar radiation and the high concentration of salt present in the water used for irrigation. Finally, The “salad” tomato is one of the most popular ones in the world. As with other varieties, Sicily is the ideal place to grow. It weighs between 130 and 250 grams. Your tomato field produces an average of 10kg of organic tomatoes each season. You do not have to commit to the consumption of the whole harvest. Each season you may decide what quantity to reserve and pay the maintenance in accordance with that amount. This way you will only pay for what you consume and will be able to sell any remaining harvest to others.
During the season, you will be able to receive the harvest that you are reserving now: a minimum of 2 and a maximum of 4 boxes. Once you have paid for the adoption, you will be able to plan your shipments from your user account. The __Datterino tomato__, more elongated than the cherry tomato and with a more compact and seedless pulp, is often cooked with pasta to make an amazing sauce. It has a sweet and intense flavor, a very thin skin and bright red color. The very watery __salad tomato__, on the other hand, is the typical salad tomato, it is eaten raw seasoned as desired, often combined with green lettuce leaves. It has dense and fleshy pulp, thin skin and a sweet and juicy flavor, very balanced and light. The preservation of tomatoes takes place in several ways, but does not depend on the variety. We recommend you not to store them together with other fruits and vegetables, which could emit ethylene (for example bananas or apples) which accelerates the ripening process. With this care and placing them inside the refrigerator, they can be stored for up to 7 days for fresh consumption. It is also possible to freeze tomatoes. They must first be cleaned, washed and dried thoroughly, placed inside an airtight container and stored in the freezer for up to 3 months. Frozen tomatoes will never look the same as fresh ones, but they are excellent for sauces and soups. Preparing them, before freezing, by removing the peel and seeds makes them usable directly from the freezer, without further preparation work. To make subsequent use easier, it is possible to blanch them, remove the peel and cut them into small pieces. Then always place them inside an airtight container. The maximum shelf life is 3 months but they are easier to cook later. It is a climacteric fruit, harvested when it reaches physiological ripeness but continues to evolve after harvesting until it is ready for consumption. Important: The fruits usually arrive hard, keep them at room temperature until they reach they are ready to eat; if you receive an alread ripe piece, you can put it in the fridge or eat it straight away.
