Adopt sheep from the flock of "Marqués de Mendiola" in Madrid (Spanien) and receive your soft sheep's cheese at home. Antonio will take care of your adoption and take its picture. You will also be able to download the adoption certificate, and if you wish, plan your visit to the farm. As the production coming from one sheep is big, the adoption is shared among various people. If you wish to have a bigger share, you may adopt more than once. You do not enter into any long-term commitment: once you have received your soft sheep's cheese and enjoyed the experience, you may decide to renew and extend the adoption.
You adopt sheep from our farm in Madrid (Spanien). The sheep belong to the Assaf breed and are of Israeli origin. Our ewes are usually white, although some of them may have a reddish colouring on the head. They are large ewes that are very suitable for milk production. They are well adapted to our area and to mechanical milking. When you adopt our sheep, we name some after members of the CrowdFarming team and others after abandoned villages in Spain. Unfortunately, Spain's rural community has experienced major depopulation in the last century and we want to pay tribute to these villages. When the sheep give birth, the lambs are raised with their mother. In the case of male lambs, some are kept for husbandry to become parents and the rest go to the slaughterhouse to be sold as suckling lambs. Your adoption is 5 years old and its productive life is around 10 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your adoption dies, we will replace it with no additional cost assuring the delivery of your harvest from others. When our best sheep stop producing enough milk, we leave them to wander around the fields. Your adoption produces an average of 300l of sheep's milk each season. With this amount we can produce around 12kg of soft sheep's cheese. 9 CrowdFarmers share an adoption who receive a box with 1.37kg of soft sheep's cheese.

Small and unevenly distributed holes. __Soft cheese with pistachios__: peeled unsalted pistachios are added in the right proportion. White colour with pistachios spread throughout the cheese and white natural rind with pistachios. __Soft cheese with walnuts__: light brown in colour with walnuts spread throughout the cheese and natural reddish-brown rind. Walnuts are added in the right proportion. __Soft cheese with blueberries__: white in colour with sliced blueberries spread throughout the cheese and natural white rind with blueberries. __Soft cheese with black garlic__: the peeled and sliced black garlic is added in the right proportion. Light brown in colour with black garlic spread throughout the cheese and natural white rind with black garlic. __Soft cheese with black truffle__: premium quality truffle and black truffle emulsion in the right proportion. White in colour with pieces of truffle spread throughout the cheese and white natural rind with pieces of truffle. You receive a cardboard box with a variety of our soft cheeses. All have been matured for seven days and their texture is moist, flexible and elastic, with small holes distributed unevenly through the cheese. The taste is fresh, light, sweet, clean and pleasant; typical of non-aged sheep's cheese. We only use raw milk from our sheep and the rennet comes from calves. The cheese is best eaten six months from the date of production. Make sure you keep it refrigerated in its vacuum pack. Once the pack has been opened, wrap the cheese tightly in cling film to prevent air from drying it out and triggering the ageing process, which would slowly change the flavour of the cheese. We make the soft cheese only with milk taken from the sheep at the end of December. As it only ages for seven days, we can prepare it a few days before you receive it in the month of January. Each variety is made on different days as the process is done entirely by hand and there's only time to make one variety per day. If you like our soft cheese and everything goes well, you'll receive it every year in January.
