Adopt vines from the farm "Fattoria Lavacchio" in Pontassieve (Italien) and receive your harvest in the form of organic sweet white wine at home. The Farmer Faye will take care of your adoption and take its picture. Also, you will be able to download the adoption certificate and, if you wish, plan your visit to the farm. You do not enter into any long-term commitment: once you receive your harvest and you enjoyed the experience, you may decide to renew and extend the adoption. These wines were tasted by a group of professional wine tasters that collaborate with CrowdFarming, and was rated 92 out of a possible 100 points, on average.

Vad adopterar du?

Adopt vines that we cultivate under the Organic Farming regulations of the European Union since 2000. During the process of adoption you can choose a name which we will use to identify your vines. You will adopt 6 vines of Chardonnay, Traminer, Malvasia or Trebbiano grown in the Chianti Rufina wine region (Northern Tuscany). Although Trebbiano is the major Tuscan white grape variety, in order to rebuild biodiversity, to limit the spreading of diseases and because of the dual exposition of our vineyards, we have planted other international varieties like the French Chardonnay and Gewurztraminer (red aromatic variety from Nothern Italy that belongs to the Traminer variety). Our current selection derives from a thorough experience in the vineyard and cellars which allowed us to tempt growing unconventional varieties for Tuscany. I have to say everyone is surprised by the freshness our Chardonnay and Gewurztraminer are able to express! Chardonnay is one of the best known and most widely grown white grape varieties in the world. The origin of the vine is Middle Eastern or, more likely, a cross between two French varieties, Pinot Noir e Gouais Blanc. Traminer originated in central Europe and was only introduced to Northern Italy in the 21st century, where it is still cultivated today. Our vineyards are situated 450 meters above sea level, on the ridge of the hill of Montefiesole, facing south-southeast for the Trebbiano and facing north for the Chardonnay and Gewurztraminer (as these 2 varieties are usually grown in colder climates), on soils with a high concentration of limestone, which potentially makes for elegant wines with forceful aromas. Our vineyards have a planting density between 4500 and 6800 vines per hectare and the chosen pruning system is mainly guyot. In the vineyards we only use organic substances and neither pesticides nor chemical fertilizers. We ask nature for cooperation: we use the natural environment to enhance productivity, leguminous plants are planted to fix nitrogen within the soil, insect predators are encouraged and varieties are alternated. The grapes are carefully selected through green pruning and green harvest as well. They are manually picked. The yield per vine is very low and ranges between 1,2 and 1,5kg. The vines bear an average of 1.75l of organic sweet white wine per season. All our wines derive from natural fermentation, i.e. without added yeast, and are produced with very little sulfites (one third of the admitted amount in organic regulations). The limited production imposed by organic cultivation guarantees, above all, a better quality year after year. Wines are bottled only those years in which they reach the quality level we seek. The productive life of vines is around 60 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your vines die, we will replace them with no additional cost and assuring the delivery of your harvest from others.

Each season we will send you a box with: 1 x __Oro del Cedro Late harvest Gewurztraminer PGI__ (bottle of 0,5l) 1 x __Vin Santo DOC__ (equivalent to QWPSR) (bottle of 0,5l) 1 x __Pachar White PGI Toscana__ (bottle of 0,75l) For this box, I have selected our most uncommon wines as well as our traditional Vin Santo for those who want to experience Tuscan sweet and white wines. These are certainly the wines that express the desire and the courage to be different. Their uniqueness, paired together with our ambition to find the highest quality, characterizes their greatness. I am so excited to share these wines with you! __Oro del Cedro Late harvest Gewurztraminer PGI __ Produced from 100% Traminer grapes and harvested from the older “Casabella” Vineyard planted in 1991, which is situated on the hilltop at 450m above sea level, helps its growth by ensuring vital temperature changes and wind. Oro del Cedro has always been very appreciated by the specialized press for its quality and for the marked originality of its style. The grapes are harvested by hand several times and put in small cases between mid-October and beginning of November when the grapes are not yet withered, but just slightly dehydrated by Botrytis. In some vintages the noble rot reaches up to 60%. The fermentation is interrupted by freezing the wine before all the sugars are transformed into alcohol in order to exalt its sweet and aromatic notes. The wine is then bottled and left to mature for several years before release as this wine acquires extra complexity with age and has unlimited aging capacity. It is bright yellow with golden reflections. It is very intense and has persistent perfumes of honey, candied fruit and spices. It pairs perfectly with fresh and blue cheeses. Serve at 10-12°C. __Vin Santo DOC (equivalent to QWPSR)__ It is produced from Trebbiano and Malvasia grapes in varying percentages from year to year (approximately 50% and 50%) on vineyards planted in 1963 and 1978. The grapes are harvested by hand in special cases where they are left to wither in a ventilated room for about four months. After this period they are softly pressed and the collected must is immediately put in small barrels of 50 liter capacity. These barrels, traditionally called “caratelli”, are placed in the attic of the winery where the wine slowly ferments and matures for at least 8 years, exposed to temperature changes during the seasons. This wine acquires extra complexity with age and oxidation, so when the bottle is open you can take your time to drink it. It has a very pronounced amber color. It is intense, fine and pleasant on the nose with notes of raisins and candied fruit followed by honey, vanilla and dry fig aromas with hints of walnut and coffee. On the palate it reveals a full and intense body, with a very good balance between the softness, the heat of its alcohol and its freshness. It is best enjoyed with matured and blue cheeses, dark chocolate or almond cookies (Cantucci). Serve between 10-12°C. __Pachar White PGI Toscana__ I have dedicated this wine to the new generation. “Pachar” (PAblo and CHARlotte) is a very special wine for us in which our expectations for the future are metaphorically embraced. Varieties: 70% Chardonnay, 20% Viognier and 10% Sauvignon blanc. The vineyards were planted between 1981 and 1990. The grapes are harvested in small cases in the beginning of September. The whole cluster is crushed softly and therefore the yield is lower than 50%. Part of the Chardonnay is aged in oak barrels, where it also accomplishes malo-lactic fermentation, whereas the rest of the Chardonnay, Viognier and Sauvignon blanc mature in stainless steel tanks for the same amount of time. The blend refines at least 3 months in the bottle before release. It is pale yellow in color with gold reflections. On the nose it is intense and elegant with evident floral notes of lime tree, vanilla, nut and minerals. It is full bodied and silky with layers of apple and light citrus supported by a creamy vanilla and a slight almond flavor. For those who appreciate aged white wines, Pachar is particularly adapted to a longer ageing. It compliments strong seafood such as smoked fish dishes and shellfish as well as rich matured cheeses and soufflés. Because of its body, this wine is also ideal with any meat, especially for those who do not appreciate red wines. Serve between 10 and 12°C. In case of sedimentation on the bottom of the bottle, do not worry! It is natural as our wines are unfiltered and not refined. All our wines are natural so can be sensitive to temperature variations. It is best to store them horizontally in a cool place. If you don’t have a cellar, ideally look for a place where temperatures are cool and constant. Alternatively, you can store them in the fridge. After the ageing period, the wines are bottled to keep all their freshness and integrity. The wines are then refined in bottles and are released only when ready to drink. We send them out in April, so we are sure the wines have settled and can express themselves at their best.
