Adopt vines from the farm "Champagne Régis Poissinet" in Cuchery (Frankrike) and receive your harvest in the form of cuvée champaign Terre d'Irizée AOC Champagne at home. Régis will take care of your adoption and take its picture. Also, you will be able to download the adoption certificate and, if you wish, plan your visit to the farm. You do not enter into any long-term commitment: once you received your harvest and you enjoyed the experience, you may decide to renew and extend the adoption. Adopt vines that we cultivate following the Organic Farming and Demeter regulations of the European Union since 2020. You adopt 3 Meunier grape vines from Champagne Régis Poissinet, a vineyard located in the Marne region, benefiting from the Champagne AOC (appellation of controlled origin). The Meunier grape vines to be adopted are located in Vallée de la Marne, in Cuchery on the “Les Briennes” plot. This beautiful plot was planted in 1988, and faces south-west. The entire vineyard was certified as organic and biodynamic viticulture in 2020. The Meunier is highly prized thanks to the clay-limestone terroir which adds depth and rounded flavors, as well as its south-west exposure and the wind from the west which keeps the vines dry. The Meunier is a black grape variety resulting from a mutation of Pinot Noir, widely found in Champagne vineyards. It has the particular merit of being more resistant to diseases and has late-starting growth. This then allows it to be less affected by spring frosts. Here you will find it blended with Chardonnay - a white grape that adds balance, freshness and lemony aromas to the Meunier variety. From the work on the vines, through vinification, bottling, up to shipping, everything is meticulously done by our team. The grapes used for vinification come 100% from the vineyard. The Poissinet family has cultivated vines since the 17th century. The know-how is passed down through the family: my son, Maxime Poissinet, works on the vines and helps me (Régis) work on the farm. Our role as winemakers is to act as an aid to the vineyard (viticulture) and the wine during vinification. We intervene as little as possible in order to let the grape variety and the terroir, the wine and the vintage (the wine’s year of production) be expressed as freely as possible. Our vision is “to return to the essence of reality”. It is important for us to bring life back to the plots, while at the same time respecting nature, biodiversity and the wine. We want to highlight a new approach to viticulture and winemaking but also to wine, and introduce our wine enthusiasts to tasting. The productive life of vines is around 100 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your vines dies, we will replace it with no additional cost and assuring the delivery of your harvest from others. The yield of a Meunier vine is 800g to 1.2kg of grapes. To produce a bottle of champagne, we need 1.2kg of grapes.
Each season we will send you a box with: 3x __Terre d’Irizée Cuvée Champagne, Champagne AOC__ (0,75l, bottle) The Terre d’Irizée cuvée is multi-vintage, mostly from 2016, then 39% reserve wine from 2015, 2014 and 2013. It is composed of 84% Meunier and 16% Chardonnay. This wine undergoes natural vinification, following the champagne method with 2 fermentations. No yeast is added to the wine; they are indigenous (natural) yeasts which allow alcoholic and sometimes malolactic fermentation. It is composed of 27 different vats and barrels, mainly oak barrels. It ages for 3 years. This is an extra brut cuvée that benefits from a very low dosage (1.7g/l), made from natural and organic concentrated grape must (organic RCM). The Terre d’Irizée remains at rest for 6 months, then the bottles will be labelled and prepared for shipping. __Tasting of the Terre d'Irizee Cuvée__ This cuvée is sparkling and luminous gold in colour. On the nose there are notes of citrus zest, lemon, white peach and toasted hazelnuts. The Meunier brings this cuvée roundness, aromas of white-fleshed fruits, stewed fruits (quince, pear, apple), peach, and spicy aromas. The Chardonnay brings freshness and balance to the wine, while its acidity allows the cuvée Terre d'Irizée a good longevity. Moreover, it adds aromas of lemon zest, grapefruit and vanilla, as well as floral notes to this cuvée Everyone perceives the character of the cuvée according to their own sensitivity and perspective. During the tasting, time stops, the senses are awakened and one experiences an effervescence of emotions. __Ageing and tasting potential__ To be served at around 11°C. You may already enjoy this wine right away. This cuvée has an ageing potential of 10 years. We recommend storing this champagne in a horizontal position, in a room with a stable temperature throughout the year. This cuvée has a natural cork, which protects the wine from oxidation. __Food and wine pairings __ This extra brut champagne pairs perfectly with a roasted cockerel and shavings of raw foie gras, with a creamy porcini sauce, or even a beef steak with ginger soy sauce. Other possible pairings are: white meats, dishes in sauce, and white fish, but also desserts like pineapple carpaccio or red fruit crumble. We harvest the plots in our vineyard generally between the end of August and mid-September. Pressing is done on the very day of the harvest. We will send you our Cuvée Terre D’Irizée champagne twice a year, in spring and autumn.
