Wild fennel (*Foeniculum vulgare*) belongs to the Apiaceae family and is rather than being linked to the production of a cultivated field, the project of making wild fennel pesto comes from the collection of these plants that grow wild on unprocessed land. This occurs particularly in those areas where we have chosen not to carry out agricultural work by mechanical means, with the aim of preserving or creating new natural environments. The main field in which the fennel is harvested and from which the secondary ingredients of the pesto also grow (olives for the production of extra virgin olive oil and almonds) is located in a natural area within a Site of Community Interest (SIC) of the European Natura 2000 network. The second field is represented by an area extending over one hectare that we would like to re-naturalise with the creation of a forest. Wild fennel pesto is a product with a very low environmental impact, born from a perennial crop that does not require irrigation and mechanical processing, originating from a plant that hosts and attracts various beneficial insects for our crops and which, with its late flowering in early autumn, plays a crucial role in the winter bee population. Finally, pesto is also a social community product: its preparation takes place in a certified organic laboratory located inside a prison, managed by a Social Cooperative that deals with the reintegration of prisoners into work. The wild fennel field has a productive life of one year. You can adopt the field for as long as you want and we will continue to take care of it by harvesting it. You can renew your adoption year after year. If your fennel field is overtaken by other wild plants, we will replace it at no additional cost, guaranteeing the shipment of the crop of other seedlings. Each wild fennel field produces an average of 0.76kg of organic wild fennel pesto per season.
Each season we will send you a box with: 4 x __Organic wild fennel pesto__ (190g, glass jars) Wild fennel is a much appreciated wild vegetable in Sicily (and more generally in other Mediterranean countries) and is used in various traditional recipes, both as a main ingredient and as a flavouring in soups, sauces or other vegetable based dishes. The ingredients are as follows: 70% wild fennel, 20% extra virgin olive oil, almonds, fresh garlic, organic apple vinegar and sea salt. The extra virgin olive oil, almonds and garlic used are produced by us directly. The pesto has a creamy texture and a strong wild fennel aromal. You can use it to dress pasta or prepare bruschetta, it is also perfect to accompany meat or fish dishes, you can add it to pizzas, risottos or to give a unique touch to soups. By keeping the jars closed in a dry, cool place (between 18 and 20°C) and away from direct sunlight, the pesto will keep its characteristics for up to 24 months; once the jar is opened, cover the remaining pesto with a layer of oil and store it in the refrigerator for 7 to 10 days.
