You adopt a pistachio tree from our farm in Villamalea (Spanje). The cultivation is certified as organic by the European Union as of 2009, and as Demeter as of 2015. You adopt a pistachio tree of the Kerman variety, well known and highly regarded globally for the size and quality of its fruit, as well as its great taste and consistency. At Casa Cañada we started growing pistachios in 2000 following agricultural practices in accordance with our philosophy and respect for the environment. We were certified in 2009 in organic farming and in 2015 we became the first producers of Biodynamic pistachio with the Demeter seal. However, this seemed insufficient and seeking to reduce the impact of man in the natural environment, and make responsible use of water, we were certified in 2019 as a Bio-Integral crop with the ARBORIGEN seal. We use an autochthonous rootstock (Pistacia terebinthus) that allows our trees to grow in dry land farming. The pistachio (*Pistacia vera*), as a wild species, is native to the high continental plateaus of Central Asia, basically the ancient Central Asian republics of the extinct USSR (Kyrgyzstan, Tajikistan, Uzbekistan, Turkmenistan) and the Balochistan region, bordering Afghanistan and Pakistan. To the west, naturally, it reaches as far as Iran and Syria. The pistachio was domesticated about 4,000 years ago in ancient Persia (present-day Iran), this area being its focus of cultivation and expansion. In the Mediterranean Basin it was introduced during Roman domination, arriving in the imperial province of Hispania in the year 63 by Pompey Crassus. However, it is during Arab-Muslim rule that it reaches its peak, development and extension in the Iberian Peninsula. In 1492 the Catholic Monarchs managed to expel the Muslims from Spain and the Christians returned to work their lands encountering an unknown tree, the pistachio. Curiously, some specimens were unproductive (the males) and were eliminated, which caused the unproductivity of the females in the absence of male pollen, so they were later eliminated making this crop disappear in our country. Our commitment to quality together with our efforts in a sustainable and environmentally friendly production model has led us to win various awards with our products, among which we can highlight the award received by our pistachios: The Premio absoluto for "healthiest and best quality product" at the Speciality/Gourmet International Fair, Dubai (UAE) October 2015. On the other hand, we have received other awards aligned to our philosophy against food waste. Your adoption is 11 years old and its maximum lifespan is 35 years. For as long as you want to keep your adoption, and we can continue taking care of it, you can renew year after year. If your adoption stops producing for any reason, we will replace it with another, and guarantee you the delivery from the production of other units. Your pistachio tree produces an average of 2kg of Demeter organic pistachios each season.
Each season we will send you a box with: 1 x __Raw Demeter organic pistachios, shelled, with skin__ (1kg bag) Receive your box of Kerman pistachios, (shelled, with skin, with a sweet and creamy texture. A unique pistachio that retains all its flavour, neither roasted nor salted, an exceptional pistachio with minimum processing! Grafting on the native variety Pistacia terebinthus, traditionally used for obtaining turpentine, gives our pistachios a “pine nutty” taste and aroma. In addition, its moisture content around 7% (greater than that of the roasted pistachio) makes our pistachio soft and creamy. You can eat pistachios at any time of the day, such as a snack between meals or with a beer or glass of wine. You can also try introducing them to recipes like salads, breads, buns… Feel free to experiment! We recommend that you store the pistachios at room temperature, protected from direct sunlight and heat sources. Although they have a higher liquid content than roasted pistachios, they are nuts that keep for up to a year. Store them in the fridge during the hottest months, to keep insects away. Remember that these pistachios have not received any post-harvest conservation treatment. Some years ago, we limited ourselves to marketing shelled only those pistachios that had not been opened naturally and needed to be peeled by machine (we all know how much it costs to open a closed pistachio!). Nowadays more and more people prefer to have pistachio kernels to be able to take them anywhere comfortably, that's why the demand for this product has risen and we allocate a part of our production to shelled pistachio (with skin), which we call pistachio kernels. The pistachio harvest in our area is usually done in early October (some years at the end of September) and lasts about a month. You receive your pistachios in March. Our pistachio preparation process is somewhat complex, and we have set this delivery date to ensure there are no delays.
