Adopt vines that we cultivate under the Organic Farming regulations of the European Union since 2018. During the process of adoption you can choose a name that we will engrave on a plaque and hang on your vines. You are about to sponsor two vine plants from the rare Languedoc grape varieties that we have rediscovered and grafted on 18-year old vines located on a single parcel: Apiran, Morrastel, Aramon, Cinsault/Oeillades and black Terret. Your adoption will be rewarded by 3 bottles of "Medieval", which is a blend of the 5 grape varieties. Black Aspiran is a very old grape variety discovered in Languedoc and is mentioned as "Esperan" in a harvest song from 1544. It can also be called Rivairenc, and there are only a few hectares of it left in France. It is a rustic grape variety that thrives in dry and infertile soil. At harvest, the juice-filled grapes are delicious and flavourful. It yields a light and pleasurable wine with a low level of alcohol. Black Morrastel is a grape variety related to the Spanish Graciano, which gives a colourful wine with a smooth, round and light tannic structure. It also has hints of pepper and of liquorice. Black Aramon is a grape variety from Languedoc especially used to make rosé. It thrives on poor soil, though with a limited yield, therefore building toward a fruity and light wine. Cinsault/Oeillades is a grape variety from Languedoc that produces a smooth, light and beautifully coloured wine with almond or chestnut flavours. Black Terret comes from the South of France. Not very colourful, but fresh, light and floral, it brings some complementary aromas and delicacy to the blend. The blend of these five grape varieties yields an atypical Languedoc wine, since it is very fresh, light with an alcohol content of 12%, well-balanced and long in the mouth. When tasting it blind, it is a real challenge to find from which region it comes from! At Grange de Bouys, these grape varieties have been gifted on soil that is muddy, with clay and sand (LAS: Limoneux argilo sableux), that drain the water but retains it in its depth. We are on hilly slopes with poor soil and a low yield, which preserves the quality of our grapes. They ripen very slowly leading to a low alcohol percentage. We prune our vines using the double Cordon Royat technique, thus limiting the yield between 20 and 40 hL/ha depending on the years. We let grass grow throughout our vineyard so that it protects the soil from the sun and from erosion. We do not use any chemical product, nor any herbicide, nor any chemical fertiliser. We follow biodynamic practices (Rudolf Steiner – 1924 - https://www.soin-de-la-terre.org/agriculture-biodynamique/) with preparations for the soil and the vine plants, as well as infusions (e.g. from dandelion, achilles, nettle, etc.) and citrus essential oil. Biodynamic adds some freshness and a mineral taste to our wines, linking them to our terroir, because our vines are deeply rooted in order to feed since we don't use fertilizers. In October we plant leguminous plants, since they capture the nitrogen from the air and store it in their roots, which contributes to bringing life to our soils. We harvest manually and with a team made up by our family, some friends and local help. Harvest starts for us at the end of August and can last until the end of September. All our parcels are in the vicinity of our cellar. Our vinification is done using an infusion method with only a little extraction, since we believe that healthy grapes are the key to a good wine. Fermentations generally take place up until December and we then blend and age the wines. I learned to make wine in Burgundy at the Lycée agricole de Beaune. The productive life of vines is around 80 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your vines dies, we will replace it with no additional cost and assuring the delivery of your harvest from others.
Each season we will send you a box with: 3 x __Organic red wine Medieval forgotten grape varieties VDF France vintage 2021__ (0,75l/bottle) The grapes of each variety are pressed together and the fermentation also happened as one. The wine is then mostly aged in stainless steel vats in order to keep its fruity taste while 20% of the wine ages in 500L Austrian oak barrels to add some complexity. The wine has a bright colour, a subtle balance of floral aromas lifted by a delicate peppery hint and a final touch of vanilla. Having only 12% degree alcohol, this wine is well suited for lunch on a terrasse. It is perfect for apéro, and goes also perfectly well with pasta, quiches, white meat and cheese. We put very little sulfites in our wines in order to preserve our health and the health of our clients, which has the added benefit of preventing headaches. The limits in organic wine-making are of 150 mg/l for white wines and rosé, and of 100 mg/L for red wines. We put only between 15 and 30 mg/l, meaning that our wines are considered as natural wines. We recommend that you open the bottle 20 to 30 minutes beforehand, or otherwise to take your time once it is in your glass! This wine can age up to at least five years, but its fruitiness will be appreciated in its first years. The harvest takes place in September and the bottling in April of the following year. This gives the wine time to age a little while still retaining its fruitiness. The wine will be shipped in March.
