You adopt 10m² of an asparagus field from our farm in Lodosa (Spagna). The cultivation here is certified as organic by the European Union as of 2010. Legend has it that many years ago a traveller from the town of Tudela went to Córdoba and tried for the first time a delicacy that he'd never seen before, an asparagus. Fascinated by this new food, he looked for some seeds to take back to his land, and from then on, this plant, the *Asparagus officinalis*, was cultivated all over Navarre. This herbaceous plant, part of the asparagus family, was introduced into Europe by the Romans and highly appreciated by the Greeks. There's evidence that the Egyptians consumed it more than three thousand years ago. Nowadays, what we know as a crown (a set of roots and buds) is planted in February, from which its first spears sprout in February while accumulating reserves in its roots over the following months (there's no harvest in the first year). In the second year, the asparagus sprout vigorously from the underground buds. The asparagus are white until they receive direct sunlight, when they change to a purple colour and modify their flavour, so we always collect them before dawn. When we finish the harvest, we immediately transport the asparagus to a highly experienced cannery. Once there, and under our supervision, the asparagus is washed, peeled and cut by expert hands. They are then quickly blanched and cooled to be placed in glass jars with only water and salt (such a rich product doesn't need anything else!). Finally, they're cooked for just enough time to secure a tasty asparagus, with the special texture that characterises them, and in perfect condition and sterilisation. When this process is finished, we take the asparagus to our facilities to prepare your orders there. At the moment, we don't have the capacity to make the preserves ourselves, but we think it's nice to work with local companies in our region. At Gumendi we've been growing organic crops since 1992, and since 2010 we've been growing asparagus on various farms in Ribera de Navarra. Your asparagus field produces an average of 16.32kg of organic natural asparagus each season. You do not have to commit to ordering the entire harvest though. Each season you can decide how much you want to reserve, and you pay the maintenance cost according to that amount. This way you only pay for what you plan to consume, and we can offer any surplus harvest to others.
You can reserve between 0 and 0 boxes for the season, and then plan the deliveries for any of the delivery dates available in the shipment calendar. Shipping format: 6 x __organic natural asparagus__ (210g, drained weight, glass jar) The asparagus you receive are ready to eat, fully peeled and cooked, so you simply have to open the jar and enjoy. You can eat them whole, in salads, drizzled with extra virgin olive oil, with mayonnaise, stuffed, in a soup, or however you fancy. Share your favourite recipe with us! The exceptionally fertile Ribera del Ebro is renowned for the quality of the products produced by its farmers. Specifically, their famous asparagus is appreciated by the most demanding palates and considered one of the most excellent natural products from Navarre. What's more, jars of "Asparagus from Navarre" can be enjoyed all year round. This delicacy has been part of the Mediterranean diet for a long time and is highly valued for its flavour. Preserved foods are one of the best tools against food waste, as we can prepare and preserve anything that can't be distributed when fresh. What's more, consumers can enjoy an exquisite product all year round, prepared with the most efficient machinery. We recommend storing the jars in a cool and dry place, without direct exposure to light. Once opened, store in the fridge.

We harvest the asparagus from March to June, depending on the weather each year. Making preserved asparagus means that we can store it throughout the year to send it to you progressively, always as fresh as possible.
