You will also be able to download the adoption certificate, and if you wish, plan your visit to the farm. You do not enter into any long-term commitment: Although your adoption will be renewed automatically, you will always be informed in advance and may decide to cancel your adoption at any time in case the preparation has not started yet.

Cosa adotti?

You adopt a plot of artichokes from our farm in Lodosa (Spagna). The cultivation here is certified as organic by the European Union as of 1992. The artichoke, which has the scientific name *Cynara scolymus*, comes from Northeast Africa and was known to the Greeks and Romans. Everything suggests that it was introduced into Italy and Spain in the Middle Ages, and today the plant is grown in all Mediterranean countries. A Greek myth says that Zeus fell in love with a stunningly beautiful maiden named Cynara and decided to make her a goddess and take her to Mount Olympus. Cynara missed her family so much that she decided to return home for a visit. Zeus, enraged and disappointed, took revenge on her by turning her into the first artichoke. Out of all varieties, the Tudela is the best known and most appreciated artichoke in Spain because of its excellent quality. The crop has a very long tradition in the Ribera region and dates back to the time of Al-Andalus, as stated in the Encyclopaedia of Navarra. Farmers in Tudela have been working meticulously for many years to achieve the variety known as 'Blanca de Tudela', which is the one we plant from July to August. At Gumendi, we've been growing it according to organic farming regulations since 1992, so respect for the environment and sustainability-based agriculture is in our DNA. The artichoke is a fascinating plant. It's a gift from Mother Nature that embraces the ground and crowns itself with a rosette-shaped armour, which conceals an edible and simply delicious heart. The artichoke harvest begins in October and lasts until June. We harvest the artichokes daily by selecting the best specimens according to their level of ripeness (going around each farm several times), and at the end of the day we immediately transport them to an experienced preservation plant. When this process is finished, we bring the artichokes back to our facilities to prepare your orders here. Right now, we don't have the capacity to make the preserves ourselves, but we think it's nice to work with local companies in our region. Your plot of artichokes produces an average of 14.4kg of organic artichokes each season. You do not have to commit to ordering the entire harvest though. Each season you can decide how much you want to reserve, and you pay the maintenance cost according to that amount. This way you only pay for what you plan to consume, and we can offer any surplus harvest to others.

Che cosa ricevi?

You can reserve between 0 and 0 boxes for the season, and then progressively plan theit delivery for any of the delivery dates available in the shipment calendar. Shipping format: 6 x __naturally preserved organic artichoke hearts__ (250g, drained weight, glass jar) The artichokes you receive are fully peeled, cooked and ready to eat, so you only have to open the jar and enjoy. You can enjoy them on their own, in salads, sautéed with garlic and oil, in a vegetable stew or however you prefer. Whichever way, they don't need much seasoning as they're exquisite with just a little bit of oil and salt. That said, make sure you share your favourite recipe with us! The Tudela artichoke is round, veering towards spherical, with a circular hole in the middle, resulting from the bracts (leaves) that fail to close the pinnacle well. The stem measures between 15 and 20 centimetres and is considered the fruit. It doesn't have a pappus (tuft of hair and filaments surrounding the seeds) and is famous for being wonderfully tender. The artichoke is picked by hand, with the best pieces being selected according to their ripeness. There's isn't just one harvest, as each one is picked at the optimal time. After picking, we wash, peel and cut the artichokes, which prevents 'oxidation' that can quickly affect them. They are then blanched and cooled, after which they are placed in a glass jar with just some water and salt (with such a rich product, you don't need anything else!). Finally, they are boiled for just enough time to guarantee a delicious artichoke with the ideal texture in perfect condition and fully sterilised. Preserved foods are an excellent way to prevent food waste, as we can produce and preserve everything that can't be distributed fresh. It also means that we can eat a product of the highest quality all year round, processed with the most efficient machinery (in terms both of production and energy use). We recommend storing the jars in a cool and dry place, without direct exposure to light. The best before date is found on the lid of each batch, but normally you'll have one year to eat them. We pick our artichokes between October and June, depending on the weather. By preserving them, we can send them to you as and when you order them.
