You adopt 50m² of a lentil field from our farm in Illana (Spagna). The cultivation here is certified as organic by the European Union as of 2022. On the field that you adopt, we grow Pardina lentils, also known as brown lentils. The lentil is one of the many plants that belongs to the legume family, which plays a key role in organic farming as legumes are great nitrogen-fixing plants, thanks to their symbiosis with certain bacteria of the genus Rhizobium. Lentil cultivation is considered one of the oldest types of farming, with some claiming that the Egyptians used to grow them as far back as 2,200 BC. In fact, Egypt seems to be the focus of this crop's expansion towards Europe, from where it spread to the Americas and the rest of the world. We always use dryland farming techniques, following a system of crop rotation. We hadn't planted lentils for some time, but in December 2021 we decided to do so again on land that had been fallow for two years to regenerate the life of its soil. Our farmlands combine traditional practices, such as incorporating remnants of previous crops into the soil to increase organic matter, with more current practices, such as the use of bacteria and bacilli to benefit growth. Six hectares of our farm have already been set aside for the local red-legged partridge, which is almost an endangered species. We sow the fields but we don't collect the crops so that the birds can use them for shelter and food. We look after your adopted 50m² to secure the highest possible quality. We hope you enjoy it! Each lentil field produces an average of 5kg of organic lentils per season.
Each season we will send you a box with: 5 x __organic brown lentils__ (1kg, paper bag) Pardina variety: this lentil is brown, about 3mm in diameter. Its skin is smooth and doesn't come off after cooking, maintaining a very pleasant and buttery texture that isn't grainy or floury at all. These characteristics, combined with its amazing flavour, make it ideal for a whole host of stews and salads. In Spain, it's very typical to cook lentils in a sofrito (onions, red and green peppers fried until golden brown), then add water with salt, and optionally spices such as paprika or curry, or even some chorizo sausage or black pudding. We'd love to hear your recipes! We recommend storing the lentils in a dry, cool and dark place and eating them with eighteen months.

We sow our lentils in December after having prepared our land. Once planted, we take great care of them until they're ready to be harvested in late June or early July. From then on, we start the cleaning and packaging process so that we can send you the lentils from November onwards.
