Adopt a cow from the flock of "AlterMonts" in Chazelles-sur-Lyon (Francia) and receive your organic cow cheese at home. Adrien will take care of your adoption and take its picture. You will also be able to download the adoption certificate, and if you wish, plan your visit to the farm. As the production coming from one cow is big, the adoption is shared among various people. If you wish to have a bigger share, you may adopt more than once. You do not enter into any long-term commitment: Although your adoption will be renewed automatically, you will always be informed in advance and may decide to cancel your adoption at any time as long as the preparation has not yet begun.
You adopt a cow from our farm in Chazelles-sur-Lyon (Francia). The livestock farming and the produce are both certified as organic by the European Union as of 2020. We are offering you the opportunity to adopt a cow from one of our 4 farms. There are 3 different breeds of cattle among the 200 cows on our four farms. The Montbéliarde, a breed of dairy cows with a red pied coat and a white head from the Franche-Comté region, mixes hardiness and milk production. The Prim Holstein, a dairy cow breed with a black pied coat from northern Europe, is symbolic of rather industrial dairy production. However, we have selected and adapted it to our breeding practices. The Jersey breed of dairy cow has a plain tan coat, originates from the island of Jersey, and produces milk that is especially rich in fat and protein. All our cows are born and raised on our farms, fed with the fodder we produce and put out to pasture for at least 8 months of the year. For the remaining 4 months they are in stalls where they are allowed to move freely, to spend the winter. The 4 farms that make up the AlterMonts cheese factory are engaged in organic farming. The terrain represents a little more than 250 hectares on which pesticides and chemical fertilisers are never used. To produce milk, the cows must calve. Their first calving takes place at around 28-30 months of age, and we keep the dairy females on our farms. They join the herd later while some of the other calves are bred for meat and directly sold to meat producers around us. The calves that we cannot raise are sold at 3 weeks to join the beef industry. Cows have a lifespan of about 10 years, but some stay longer on the farms, and sometimes we are forced to separate them from others before they are 10 years old. These then go to the beef industry as well. Some are sold as minced burger meat directly to local consumers. Others leave for a more protracted process chain (with several intermediaries) while remaining in the region to limit the animals' movements. Our flock has an average age of 5 years and the maximum lifespan of a cow is about 10 years. For as long as you want to keep your adoption, and we can continue taking care of it, you can renew year after year. If your adoption stops producing for any reason, we will replace it with another, and we guarantee your delivery from the production of other units. Your adoption produces an average of 6000l of milk each season. With this amount we can produce around 600kg of organic cow cheese. 387 CrowdFarmers will share the adoption, and each one will receive a box containing 1.55kg of organic cow cheese.
Each season we will send you a box with: 1 x __Organic soft Tome__ (approx. 750g, wrapped in cling film) 1 x __Organic Lairdesmonts__ (approx. 800g, wrapped in cling film) __Organic soft Tome__ is a pressed raw milk cheese that ripens over 6 to 8 weeks. This young and creamy cheese is appreciated for its smoothness, orange crust and delicate taste. It is well-appreciated on cheese platters thanks to its mild flavour, but it can also be cooked and is especially delicious stuffed in puff pastry or ravioli! __Organic Lairdesmonts __is a pressed raw milk cheese that ripens for at least 4 months. This platter-suited cheese has holes in it that are created during ripening. With an orange crust and a texture that is a little drier than the Tome, it is appreciated for its sweet aromas and light nutty taste. You will enjoy these flavours as you bite into a slice of Lairdesmonts, but it can also be used, like processed cheese, on and in your pies and gratins! AlterMonts is a small artisanal cheese factory in which all our products are created by hand. They are made in the cheese factory from the milk we collect on the 4 farms and to which we add ferments, veal rennet and salt. They are also refined on-site in our cellars. For this purpose, they are brined (rubbed with a saltwater solution) and turned several times a week. Ripening takes place on spruce planks. We also cut and package our cheeses ourselves. For this last step we need to use food film to ensure the cheese is well-preserved until you receive it. After you receive them, these cheeses will keep very well in your refrigerator for up to 4 weeks (leaving them in the film so that they do not dry out), but we advise you to taste them at room temperature so that they reveal the best of their aromas.
