You adopt 27m² of an original spelt plot from our farm in Neu-Ulm (Allemagne). The cultivation here is certified as organic by the European Union as of 2017 and follows the Bioland guidelines. We grow the old spelt variety Oberkulmer Rotkorn. Due to its originality, spelt (*Triticum spelta*) is considered to be an ancient cereal, as its history in Europe goes back to the Neolithic Age. In the 19th century, spelt was the most important cereal in southern Germany, but was then replaced by wheat (due to its advantages in cultivation), so that from 1950 onwards it was only to be found sporadically in the fields. Later, due to the industrial development of agriculture and the associated breeding, wheat was crossed with spelt in order to improve the cultivation properties and to establish spelt cultivation more firmly again. We have deliberately chosen the old Oberkulmer Rotkorn variety, because it is pure spelt, without wheat cross-breeding. That is not the case with the new varieties. That is why we speak of original spelt here. The Oberkulmer Rotkorn is characterised by long stalks and a beautiful light brown-reddish colour when ripe. Since the 1980s, my father-in-law has again increasingly focused on the cultivation of spelt through cooperation with a regional mill. We sow our Oberkulmer in autumn. The cultivation is done according to organic guidelines. No chemical pesticides or mineral fertilisers are used. Weed control is exclusively mechanical and, if necessary, also done by hand. The harvest is brought in with a combine harvester at the beginning of August. Since it is a spelt grain, i.e. the grain is covered and protected by a husk, a kind of hard skin, the original spelt has to be dehusked in a special hulling mill after harvesting in order to be further processed. Each original spelt plot produces an average of 4.5kg of Bioland organic original spelt products per season.
Each season we will send you a box with: 2 x __original spelt flour type 630__ (1kg each, paper bag) 1 x __original spelt wholemeal flour__ (1kg, paper bag) 2 x __original spelt wholemeal pasta__ (500g each, paper bag) 1 x __original spelt wholemeal flakes__ (500g, paper bag) Original spelt is generally considered to be more digestible than wheat. __Original spelt flour type 630 __is the lightest spelt flour. It can easily replace light wheat flour. It is suitable for baking desserts, cakes, pastries and white bread. The shelf life is at least 1 year if stored in a cool and dry place. __Original spelt wholemeal flour__ is made from the whole grain, which means all the ingredients of the grain are contained in the flour and the mineral and fibre content is higher than in the other flour types. Wholemeal flour is suitable for bread, for example. However, it is also possible to replace a part of light-coloured baked goods with wholemeal flour, which makes the food more wholesome. The shelf life is at least 1 year if stored in a cool and dry place. __Original spelt wholemeal pasta __is made only from our original spelt wholemeal flour and water, no other ingredients are necessary. They have a beautiful dark brown colour and are an indispensable part of a wholesome cuisine. The shelf life is at least 2 years if stored in a cool and dry place. __Original spelt wholemeal flakes__ are flaked cold. The whole grain is rolled into flakes without any previous processing steps. Our flakes contain a lot of dietary fibre. With their full, original spelt flavour, they are best used in mueslis or baked goods. Depending on the weather, the harvest usually takes place in July, after which the flour is milled, pasta and wholemeal flakes are produced. Your harvest box is ready for dispatch at the end of October to the beginning of November.
