You adopt 3m² of a vegetable plot from our farm in Rignano Garganico (Italia). The cultivation here is certified as organic by the European Union as of 1998. In your adopted vegetable field, we grow Taylor variety tomatoes, Genovese basil, Ovale Meronda aubergines and Mutabile Sativa courgettes. Our tomatoes are chosen according to taste and intended use: for example, if we want to make an organic sauce, we plant Taylor tomatoes. Taylor is a variety used for processing tomatoes and we chose it for its skin and flesh characteristics. The slightly sour taste and thick sauce they produce have made them world famous as sauce tomatoes. This variety is characterised by the 'sprouting' process, which means it produces many side shoots that side shoots which need to be removed in order to have the right balance between the vegetative part and the amount of fruit produced. We grow the dwarf version of this variety, which has a smaller plant that does not require a stake. Aubergines originated in the Middle East, were brought to Sicily by the Arabs during one of their colonisations and spread from there to the rest of Italy. Courgettes are in the same family as aubergines and were brought to Europe, specifically Spain, by Christopher Columbus. From Spain they then spread to the rest of Europe, including Italy. Basil originated in Asia but spread to Italy with the Romans. Initially only used for medicinal purposes, in the 19th century it started to be used for food purposes as well. We grow the various vegetables in different plots, which we rotate every year to prevent the soil from becoming too impoverished. With this package you are supporting an organic, sustainable and ethical supply chain. In fact we sow, grow and process all our products in our certified organic factory in Rignano Garganico, a few kilometres from the production area. Your adoption produces an average of 4kg of organic tomatoes each season. With this amount we can produce around 1.68kg of organic tomato sauces with vegetables.
Each season we will send you a box with: 2 x__ organic tomato sauce with basil __(280 g, glass jar) 2 x __organic tomato courgette sauce__ (280g, glass jar) 2 x __organic aubergine tomato sauce__ (280 g, glass jar) __Basil sauce__ is an excellent Mediterranean sauce. Made with fresh organic basil, it is a sauce with a 'summery' flavour. Creamy and velvety, it has a delicate taste that goes well with the preparation of pasta sauces, baked recipes, pizzas, panzerotti, etc. __Courgette sauce__ is a delicate-tasting preparation that goes well with cheeses, from grana padano to caciocavallo Garganico. __Aubergine sauce__ is a typical condiment of traditional Italian cuisine. It is perfect with spaghetti, bucatini or other long pasta. We recommend adding fresh basil to complete your pasta dish. How to use it: you can heat up the sauce or pour it directly over pasta. You can store the unopened jars in a cool, dry place for up to 18 months from the date of receipt. Once the jar has been opened, we recommend storing the product in the refrigerator and consuming it within 3-4 days. ¿Cuándo lo recibes?
The harvesting of the various vegetables takes place at the end of the summer, when the tomatoes are very ripe, in order to give a better flavour to the sauce. Once harvested, we proceed to cleaning and cooking the vegetables and casing them, so we can send the sauces to you in October.
