¿Qué adoptas?

You adopt 14m² of a buckwheat field from our farm in Vorau (Austria). The cultivation here is certified as organic by the European Union as of 2015. In addition to these, we have, of course, also developed our own guidelines and values over the years. For example, we make sure that we only use our own products from the closed-loop economy of our farm then we bring out into the field (for example, for the composition of the soil or to provide the plants with nutrients). The true common buckwheat (*Fagopyrum esculentum*) belongs to the family of knotweed plants (Polygonaceae). Buckwheat is a so-called gluten-free "pseudo-cereal". Why pseudo? Although it does not belong to the sweet grass family (Poaceae), it is used in the kitchen in a similar way to cereals. Its German nickname "Heidekorn” = “heather grain" probably refers to its origins in Turkey or the Asian region. In fact, very light soils such as heather soils are enough for buckwheat to thrive. It was very popular in the Middle Ages as an alternative to rye, wheat and oats and thus shows its long history. Due to its oil- and starch-containing seeds, buckwheat is especially appreciated in wholefood cuisine by vegetarians, vegans and people with gluten intolerances. In your adopted field you will find an annual herbaceous, fast-growing plant with very deep fibrous roots (about 1m). The white or light pink flowers (depending on the variety) attract numerous insects and are a wonderful bee pasture during the flowering season. As far as crop rotation or cultivation is concerned, there are no strict requirements, as buckwheat is even compatible with itself, so may be grown again the following year. Since the grains ripen differently, we keep a close eye on their development by checking them almost daily at the beginning of September, which allows us to pinpoint the perfect harvest time. This attention is reflected in the best quality and taste. After threshing with the combine harvester, the grains are air-dried and hulled. Afterwards, they can be used whole or ground in the kitchen. Due to weekly inspection rounds, we are able to precisely determine the plants' development and the perfect harvest time. The attention we give to this can be noticed in the best quality and taste. We receive countless awards and unique praise for our product and our farming philosophy from our customers. This feedback encourages us to continue to keep doing what we are doing and keep bringing our creations into the world. Each buckwheat field produces an average of 2.8kg of organic buckwheat grains and flour per season.

¿Qué recibes?

Each season we will send you a box with: 2 x __organic buckwheat, whole grains__ (700g each, in kraft paper zip bags) 2 x __organic buckwheat flour, ground__ (700g each, in kraft paper zip bags) In your buckwheat harvest box you will find 2x 700g whole buckwheat and 2x 700g buckwheat flour. All buckwheat is 100% organically grown from our fields. Due to the blower cleaning and gentle drying after harvesting, all important ingredients are preserved. __Natural whole buckwheat grains__ have a slightly tart taste and crack easily when chewed. They taste delicious sprinkled on salads or in muesli for breakfast. They can also be soaked. The whole grains are also ideal cooked as a side dish, like rice. My favourite tip: roasted buckwheat grains with a little salt are absolutely delicious. I recommend the __buckwheat flour__ for baking bread, delicious buckwheat pancakes, buckwheat cake or other gluten-free pastries. There really are so many delicious recipes! Compared to conventional cereals, buckwheat contains more different amino acids and provides a very good protein supply. Can be kept for up to two years if stored in a well-sealed dry place in our bags or in a sterile screw-top jar.

¿Cuándo lo recibes?

The buckwheat harvest season is in October. The whole field is harvested on the same day. Then the seeds are cleaned and hulled, air-dried, then packed until we can ship them to you.
