¿Qué adoptas?

You adopt 40m² of a ginger plot from our farm in Dümmer (Alemania). The cultivation is certified as organic by the European Union as of 2009, and as Demeter as of 2009. We would like to invite you to adopt a plot from one of our 15 biodynamic ginger beds. Fresh ginger is only available directly from the field and is distinguished from dried ginger by its freshness and intensity. Growing ginger, a tropical plant, in northern Germany? How can that be ecologically sound? With exclusive use of “heat waste” and grass mulch from our own farm! We heat without gas or electricity and don’t use artificial fertiliser or pesticides. The ginger plant (*Zingiber officinale*) looks very similar to local reeds and as a tropical plant has a great need for warmth and moisture. The ginger that’s usually for sale comes from far away in Asia. We are delighted that we have been successful in growing ginger in our greenhouses in the northern German region of Mecklenburg! Cultivation of the plants begins in February. Small pieces of the ginger rhizome are planted in fertile potting soil in small pots. The small plants need a constant temperature of 26°C until they are planted in May and June in their final location in the greenhouse. To prepare the soil for planting, the soil is sprinkled with stone dust and gently loosened with a spade machine. After planting, the ground between the ginger plants is covered with fresh grass clippings from our meadow or our own hay from the previous year. With this protective layer, the ginger is nourished, evaporation is reduced, temperature fluctuations are evened out, weeds are suppressed, and this mulch layer also serves the continuous food supply of my favorite animals, the earthworms, and many other small animals and microbes. The soil structure after ginger cultivation is therefore wonderfully crumbly. Your ginger plot produces an average of 5kg of fresh Demeter organic ginger each season. You do not have to commit to ordering the entire harvest though. Each season you can decide how much you want to reserve, and you pay the maintenance cost according to that amount. This way you only pay for what you plan to consume, and we can offer any surplus harvest to others.

¿Qué recibes?

You can reserve between 2 and 10 boxes for the season, and then plan the deliveries for any of the delivery dates available in the shipment calendar. Shipping format: 0.5 kg __Fresh Demeter organic ginger__ (loose in a box) * It will surprise you with its juiciness, intensity and freshness * Fresh Northern German ginger with characteristic spiciness * Organic and biodynamic agriculture, since 2009 with the EU organic label and biodynamic (Demeter) certification * Use the same way as the well-known storage ginger, ie for tea, delicious dishes, or in a smoothie * At the beginning of the season it has no or a very thin skin, at the end of the season it is a bit thicker, you can scrape it off or eat it as you like * You can cook the greenish/red stem end in your recipes, but you won't want to eat it because of its fibers * To protect the plants and ensure their growth, this product was grown in green houses * It keeps best in a damp cloth or container in the fridge for up to two weeks * Ginger can also be frozen well or pickled with salt or oil; we will put more detailed instructions for processing in your harvest box We start harvesting when the ginger has a fresh, fruity, pungent aroma and is not very fibrous. It changes through the course of the season, becoming yellower, more fibrous, and developing skin. Unfortunately, complete ripening as in its tropical homeland is not possible here in northern Europe due to the short length of the day and the lack of warmth in autumn and winter.

¿Cuándo lo recibes?

We start harvesting at the end of August, when the ginger plants are between 1.2 and 1.6m high and have grown so densely that nobody can walk through the paths anymore - we feel like we’re in the jungle! The characteristic, beguiling scent accompanies us and we all love it. We finish the harvest in November.
