Caciocavallo is an organic spun cheese made of very simple and genuine ingredients: pasteurised milk, salt, rennet, and lactic ferments; we only use natural calf rennet, which is of animal origin
It is perfect with salads, casserole, risotto, pasta, and we also enjoy it with honey, jams, and nuts; it is also excellent baked or pan-fried with vegetables
You can store the Caciocavallo in the refrigerator covered with a cloth or a sheet of paper; this way, you can enjoy it for up to 30-50 days after receiving it
When you receive it, you may notice some liquid around the mound, but don't worry, this will not affect the cheese: you can simply dry it with a cloth

I am Ovidio, and I have been running the family business for almost fifty years with my wife and children. I founded Fattoria Lucciano with my father in 1974, but our family started farming in the early 1900s. Despite the difficult early years, the farm has developed steadily, always following the path of environmental sustainability and adopting agronomic and animal management practices that are mindful of this aspect. I have always been trying to produce differently, following my love for the land and the surrounding ecosystem, even when these practices didn't seem so important yet. For this reason, our daily goal is to improve the way we farm and produce, bearing in mind three fundamental concepts: * Improving the environmental impact of our farm * Improving the living conditions of our animals * Improving working conditions for everyone I try to pass on the love for this type of farming to my children. My work aims to maintaining a healthy environment in which it is possible to work and live well without forgetting the importance of transmitting these values to the new generations. Every morning I get up at 5 a.m. and start my daily routine, which has become a pleasure after more than 30 years of experience. The days are organised according to the priorities of the different seasons, and I can always count on my children's help, who look after the vineyard, the olive groves, and the farm. Fattoria Lucciano
Lucciano Farm got its name from the area where it is located, which derives from the ancient pre-Roman pagus settlement in the area, equipped with a wall and a rampart. We are in Civita Castellana, in the province of Viterbo, in a purely agricultural and very ancient area also called "Agro-Falisco." Agro Falisco is a land rich in history. It is an area of great agricultural importance, thanks to its geographical location, a vast production of various valuable products such as cow and sheep cheeses (Caciocavallo del Lazio or Pecorino Romano P.D.O,), extra virgin olive oil (P.D.O, Tuscia), wine (P.D.O, Violone), hazelnuts (P.D.O, Roman hazelnut) and many other products included in the Ark of Taste and slow food presidia. For this reason, the economy of the area is predominantly agricultural. The sector keeps developing and creates new job opportunities for young people who, in ever-increasing numbers, devote themselves to the various sectors of agriculture. The history of Fattoria Lucciano began a long time ago. Our ancestors, farmers like almost the entire population of the time, in addition to cultivating the fields, also dedicated themselves to the harvesting and subsequent processing of olives into oil and grapes into wine. These products were marketed in Rome. At the beginning of the 1970s, my father and I bought a very large farm (120 ha), which is precisely where all the workshops, the farm centre, and the livestock farm are located today. Thus, we began with breeding dairy cows and the subsequent cheese production. At the end of the 1980s, the company officially became organic. In the early 2000s, we built a sales network dedicated to the end consumer and moved the oil production laboratories to Lucciano. In 2009, my children joined the company. In 2011, we completed a photovoltaic plant, a biomass plant, and a solar thermal plant to accomplish energy self-sufficiency within our company. In 2012, we started the yoghurt production, and in 2014, we inaugurated the new wine cellar and the farmhouse with a restaurant, rooms, and a small wellness centre. In 2017, we started hazelnut processing and the production of hazelnut spreads, leading up to March 2021, when we had the opportunity to buy a second farm of 75 ha in the nearby town of Nepi, where we could produce all the feed to supply the herd and thus make the farm self-sufficient. In June 2021, we inaugurated the new fully automatic milking robot that helps us produce very high-quality milk thanks to a sophisticated real-time analysis system that takes place during milking. We now have two wells in the farm, and each of our dairy cows drinks about 120 litres of water per day (compared to 200 litres of water a day drunk by a cow from intensive farming). We grow cereals, legumes, and fodder seed mix to feed our cows. In addition, we grow hazelnuts, vines, and olives to produce hazelnut spreads, wines, and extra virgin oils. Our orchards are covered with turf all year round to avoid evapotranspiration of the soil, and we use a drip irrigation system. Furthermore, we practise grassing on all orchards and prefer forage species with little need for water. We strive to maintain a high content of organic substances to improve the water situation of the soils. We control and promote biodiversity within our farm by planting hedges surrounding each of our plots and providing an ideal habitat for local microfauna (especially insects). Our guiding star is self-sufficiency, which is why the percentage of waste in our production system is very low. We try to reuse any production waste whenever possible, which is why we have a composting area inside the company. We have 12 employees directly employed by the company and who receive a salary in line with the laws in place. We always try to maintain a good working environment by recognising the merits of our employees. We cooperate with a social cooperative that allows five young people with special needs to participate in our activities.
