¿Qué adoptas?

You adopt 1m² of a kohlrabi field from our farm in Claira (Francia). The cultivation here is certified as organic by the European Union as of 2018. We have plots with plastic tunnel greenhouses as well as plots in open fields. You will adopt part of the plot under a tunnel for this crop of kohlrabi. This design means frost effects on the crop are limited. The term 'kohlrabi' appeared in the French language in the 17th century. In Latin, *caulo-rapa* means 'turnip', and more specifically, the variety Gongylodes means 'knees', alluding to the fact that the bulbous part, which rests on the ground, gives the impression that the plant is kneeling. Kohlrabi is not a root but a stem swelling or botanically speaking, an aerial tuber. It is highly appreciated in Germany and Northern Europe but remains rarely consumed in France and other countries of Western Europe, where it is often intended for farm animals. During the last world war, with the shortage of foodstuffs, kohlrabi, like Jerusalem artichokes, rutabagas and turnips, was consumed daily. Marked by this period, many people have not eaten it since. Even today, these vegetables are maligned as a poor person's vegetable. But for some time now, we have been rediscovering the 'ancient vegetables', including kohlrabi. We plant the kohlrabi beneath coverings starting from mid-November and to limit the development of weeds, we plant the cabbages under biodegradable mulch. This crop is untreated because it is very hardy, and we only water very lightly twice a month. Its water needs are very low. Each kohlrabi field produces an average of 2.5kg of organic kohlrabi per season.

¿Qué recibes?

Each season we will send you: __1 box of 8 organic kohlrabi (about 2kg)__ * 1 box contains 8 organic green and purple kohlrabi in unequal proportion (about 2kg); they are homogeneous, they do not becoming woody and they are very sweet and very tasty * Kolibri (late February to late March): purple in colour; sweet and delicate aroma with hints of hazelnut when raw, its skin is relatively thick, with a texture similar to radishes * Korist (late February to late March): green in colour; sweet and delicate aroma with hints of hazelnuts when raw, its skin is relatively thick, with a texture similar to radishes * Organic farming certified by the European Organic Farming label since 2018 * To protect the plants and ensure their growth, this product was grown with the help of additional artificial structures (green houses) * Raw, it is best to peel it. You can, for example, grate it or put it in a salad; cooked, it is more like a turnip and is cooked in the same way, with potatoes and carrots in soups and stews; use it in pan-fried vegetables, in a pot au feu, in a tagine, etc; it is possible to ferment it like with sauerkraut (Lacto-fermentation) * Our farm is not a screw factory: each vegetable is unique in appearance and size * Harvested on request, shipped without wax or preservative treatments in a cardboard box without plastics * If you keep them in the fridge, they can last up to 10 days in good condition

¿Cuándo lo recibes?

The shipment will be from December until March; later shipments would make the kohlrabi woody due to the temperature rise, and it would become less tasty.
