There is evidence of Lambrusco vines in our lands that go back more than 2000 years, and many more have been found in the following centuries. Lambrusco grapes have roots in the history of our land and in the popular culture. Our traditional and historical products received national and international recognition from experts of worldwide cuisine. The research for authenticity and quality are intrinsic in everything we produce. The purpose of our efforts is not a mere economic interest. Our fields are not certified with the EU organic label, but the production system we use to make balsamic vinegar is. In other words, during the process the product does not come into contact with any chemicals, the machinery is thoroughly washed after each operation and, in general, follows the rules of the organic production regulations. Included in the box you will find the two iconic products of our region: a bottle of Traditional Balsamic vinegar from Modena PDO made by us and a slice of Parmigiano Reggiano PDO made by the Caseificio Sociale Castelazzo. Each season we will send you a box with: 1 x__ Traditional Balsamic Vinegar from Modena PDO __(100ml, bottle) 1 x __Parmigiano Reggiano cheese PDO__ matured minimum 30 months (500g, vacuum packed) Acetaia Castelli's __Traditional Balsamic Vinegar from Modena__: a traditional Italian product, aged for a minimum of 12 years in barrels of different types of wood and made from a single ingredient, grape must. Characterised by a long-lasting, intense aroma with a pleasant, harmonious acidity. Well-balanced sweet-and-sour flavour and consistent density. The __Parmigiano Reggiano__ matured for at least 30 months by Caseificio Sociale Castelazzo: characterised by a golden-yellow rind and a straw-coloured centre; fragrant, delicate and a tasty flavour. Lactose-free. The products in this package form a perfect combination, given their common origin, which is Reggio Emilia and Modena. We recommend cutting the Parmigiano Reggiano into pieces and pouring a few drops of Traditional Balsamic Vinegar from Modena on top. They can be used on their own: Traditional Balsamic Vinegar goes very well with meat and mature cheeses. Parmigiano Reggiano can be enjoyed just like that or grated over a rich risotto or first courses. Traditional Modena Balsamic Vinegar can be stored for 10 years in a cool, dark place. Vacuum-packed Parmesan cheese keeps perfectly for 180 days in the refrigerator at between 4 and 8 degrees Celsius.
