If stored in a cool and dark place, honey can be kept well beyond the best-before date of one year
Raw honey can crystallize during storage, this is a normal process that occurs in the majority of the honey varieties and is a sign of purity; the internal temperature inside one of our beehives is around 35°C at the moment of extracting the honey; when filling the jars the honey is still liquid but with time it crystallizes because room temperature is much cooler: if you prefer the honey liquid,
we recommend you heat it slowly in a warm water bath
Product with history
The Vienna district apiary is driven by female forces! My name is Adriana Traunmueller and I found my calling as a beekeeper. After studying psychology, I realized that I would actually rather work with my hands. So I became the first apprentice of apiculture in Vienna in a long time. Once I finished the apprenticeship, I started a masters degree while also teaching at the apiculture school in Vienna. This not only enables me to passionately accompany our hives but also our students throughout the year and gives me the opportunity to keep my own learning journey going.
My colleague Maria Binder also wanted to transform her knowledge and passion for sustainability into action, after finishing her degree in biology and eco-design. Being the one skilled when it comes to organizing, she is managing the administrative tasks in the office, schedules the harvest and brings her creativity in by developing our marketing and sales strategies.
We are both happy to have found a meaningful task working at the Vienna District Apiary and consider ourselves lucky to have the opportunity to interconnect urban life with nature.
Our team is completed by the founder of the company, Matthias Kopetzky. Working as a certified witness for business fraud he is detecting criminal cases within his main profession as a forensic expert and using beekeeping as a balance. 2014 his sister-in-law called him up, telling him how her father, a beekeeper, decided to retire. Without hesitation Matthias took over the remaining hives, moved them to Vienna and laid the foundation for the Vienna district apiary. Maria and I joined him later on. As a passionate (but not necessarily always) crazy scientist, Matthias is the one conducting research projects, which we participate in.
We consider CrowdFarming an amazing and modern concept, bearing a lot of advantages for farmers as well as customers. We are happy to, in this way, deliver our honey directly to you, the Crowdfarmer, without further intermediaries.
Our apiary is located in centric Margareten, the 5th district of Vienna. The Austrian capital is divided into 23 districts, all of which are home to (some of) our bee hives. This focus on various locations is also reflected through the name “district apiary”, we chose when starting in 2014. Our home base in Margareten is a testimony to what we do and love, as entering the office one is greeted by the aromas of honey, propolis and beeswax, making you stop and just enjoy it for a second. While this location hosts our office, a little shop and the space we need to process our products, we are hardly ever there during spring and summer as that is the time to go visit our approximately 200 bee hives all around Vienna. We are moving around a lot, getting to enjoy the often amazing views across the city as the hives are located all over Vienna’s parks, urban rooftops of hotels and historic buildings, universities, vineyards or even private gardens provided by bee-loving homeowners.
We are a small team of three people: Matthias our founder, by his family often called the only “king-bee” in the world as he appears to be flying around whenever the bees are. Maria, the conductor of our little humming group, keeping the organization afloat and Adriane, probably our most passionate team member, leaving behind psychology to work with our bees instead.
It is not just the company that is labeled organic but our mindset, which we try to integrate in as many areas as possible. We are guided by the principles of sustainability and circular economy. Considering these principles we strive for innovation and with some courage often go for a learning by doing approach, which sometimes leads us towards something great and other times not. Another very positive trait about working with bees is the fact that there is hardly any waste, everything is being processed or re-used. In our organic apiculture the main material is wood, which at the end of its lifecycle can be thermally utilized. Other materials from the hive are generally biodegradable (e.g. can be composted) and/or re-used (e.g. beeswax). The plastic containers from the feed are being recycled.
Through our regional partners we are supporting the local supply of the people with honest products and knowledge about what they contain. Further, we are passionate about education, which is why we gladly share our knowledge about bees with our customers, partners and of course you, our CrowdFarmers.
We do this for example through bee-tours through Vienna. As a participant you can act as a multiplier of our knowledge transfer and together we can work towards a sustainable future, preserving nature and its biodiversity.
