The project

Adopt an olive tree from the farm "Terradiva" in Minervino Murge (Italy) and receive your flavoured organic extra virgin olive oil at home. Vincenzo will take care of your adoption and take its picture. You will also be able to download the adoption certificate, and if you wish, plan your visit to the farm. You do not enter into any long-term commitment: Although your adoption will be renewed automatically, you will always be informed in advance and may decide to cancel your adoption at any time as long as the preparation has not yet begun.

What do you adopt?

You adopt an olive tree from our farm in Minervino Murge (Italy). The cultivation here is certified as organic by the European Union as of 1998. When placing the adoption you can choose a name which we will use to identify your olive tree. The majority of the older olive trees on our farm are of a very typical variety in Puglia: the Coratina, and they are mostly between 70 and 80 years old. We caller them ¨older¨ rather than ¨old¨, because the olive tree is an extraordinary plant which can live for centuries. Coratina olive trees are very resistant and adapt to a large variety of soils, including ours, which are stony and calcareous. The name of this variety originates from a small town in an area called "Corato". Curiously, in our dialect, our grandfather was also called "il coratino" precisely because he moved from that city to our town as an olive tree pruner. We take care of our trees one by one, and we plant them in the traditional way, with about 7 meters of distance between them. We have been cultivating olive trees with the organic farming certification for more than twenty years. It was our father who made the decision to transition to organic farming in 1998, when organic farming was known to very few people. We are responsible for the trees throughout the year, taking care of them in all ways, from pruning to their nourishment with substances permitted by organic farming, to the semi-mechanized olive harvest, to processing in the mill. Harvesting only takes place during the day in order to safeguard the birds and their nests, so that they can be safe and undisturbed during the night. Terradiva is our way of restoring a little beauty and dignity to the world of agriculture. The Terradiva brand was founded in 2015 by my sister Angela and I. Today in Terradiva, our whole family is there. It is a small business, so our products are handcrafted, including the packaging and labelling which is done by hand, one by one. As a younger generation, we are committed to combining family experience with our training and contemporary vision of a family-run organic farm, we are very focused on sustainability and the care of our territory. Your adoption is 50 years old and its maximum lifespan is 200 years. For as long as you want to keep your adoption, and we can continue taking care of it, you can renew year after year. If your adoption stops producing for any reason, we will replace it with another, and guarantee you the delivery from the production of other units. Your adoption produces an average of 20kg of olives each season. With this amount we can produce around 1.5l of flavoured organic extra virgin olive oil.

What will you receive?

Each season we will send you a box with: 1 x __Allegro organic extra virgin olive oil__ (250ml, bottle) 1 x __Vivace organic dressing made with extra virgin olive oil and chilli __(250ml, bottle) 1 x__ Piano organic dressing made with extra virgin olive oil and laurel __(250ml, bottle) 1 x __Festoso organic dressing made with extra virgin olive oil and oregano__ (250ml, bottle) 1 x __Calmo organic dressing made with extra virgin olive oil and mint__ (250ml, bottle) 1 x __Giocoso organic dressing made with extra virgin olive oil and fennel __(250ml, bottle) We have dedicated the names of our oils to music, and we have chosen them by imagining their flavours as symphonies that can have different tempo and character. In the box you will find a bottle of classic extra virgin olive oil, from the Allegro line, and five aromatic oils in which extra virgin olive oil meets Mediterranean spices. The classic__ Allegro__ oil contains olives of a single variety, Coratina, typical of our area. It is an intense oil, and it has a structured flavour, with the scent of freshly cut grass, almond, tomato and artichoke, with bitter and spicy notes on the palate. This oil goes very well with legume-based dishes, vegetable soups, red meats but also bruschetta and raw vegetables. In the aromatic oils, 100% Coratina organic olive oil is combined with spices. In the __Vivace__, the olives are pressed in the mill directly with the fresh organic hot pepper. The olives used for the __Piano__ are also pressed in the mill with fresh organic laurel. For the others, the 100% Coratina organic oil is mixed with organic essential oils extracted from the oregano (__Festoso__), mint (__Calmo__) and fennel (__Giocoso__) plants. The organic laurel we use comes our farm while the organic chilli comes from a nearby organic company. The oregano, fennel and mint come from an organic farm in Sardinia. We recommend using the aromatic oils raw, to preserve the scent and flavour of the spices. Try them each with cooked or grilled vegetables, on summer salads, and each time their taste will be fresh and new. For vegetarians and vegans we suggest experimenting with these oils with seitan and tofu recipes. Chilli pepper oil is ideal with pasta dishes, pizza, soups and legume-based dishes, but we have found that lovers of spicy flavours use it with practically anything! Laurel oil pairs well with potato-based dishes, with artichokes, with boiled fish and boiled meat. Oregano oil is excellent on pasta dishes with tomato sauce, on meat dishes with tomato sauce, on pizza (particularly on Margherita and Napoletana), but also on bruschetta, mozzarella, and on stewed cod. Fennel oil goes well with fillet or roast pork, but also with fish and especially sardines, hake and salmon. Mint oil is very suitable for summer dishes: cold pasta or rice salads, cold side dishes with a chickpea or bean base, grilled fish and meat. These oils have a shelf life of 18 months. For optimal conservation, keep the bottles away from sources of light and heat, in a cool, dark and dry place.

When will you receive it?

The harvesting season for Coratina variety olives begins in November. You will receive your box at the end of September immediately after our first production of the new lines of oregano, fennel and mint aromatic oils.
