You adopt an almond tree from our farm in Avola (Italy). The cultivation here is certified as organic by the European Union as of 2019. When placing the adoption you can choose a name which we will use to identify your almond tree. On our farm we have the Avola almond variety, which is recognised throughout the world, and is cultivated exclusively in our municipality in the province of Syracuse. The almond tree is a medium to large plant, which when fully developed can reach a height of 8-10 metres. It is a plant that enters its productive years slowly, and has a longevity of 70-80 years. The tree's crown - depending on the variety - can be either assurgent or expansive. It has a very robust root system, but it is not very expansive. Having said that, in dry, arid environments with loose soil, the roots can develop to a depth of more than 1 m. The trunk has a brown bark which is rough and cracked longitudinally. The leaves are lance-shaped and toothed at the edges, very similar to those of the peach tree, but smaller. The almond tree's flowers are pinkish-white with some areas suffused with purplish red. Climatically, the almond tree is a species that is very resistant to high summer temperatures, drought and winter cold. To ensure a natural development of the plant and reduce the use of pesticides to zero, it is grafted onto wild bitter almonds. This natural grafting prevents the sapling from being attacked by pests. This characteristic gives the almond a slightly bitter aftertaste, typical of the Avola variety. The fruit is a drupe containing the seed that represents the edible part We follow the cultivation of the almonds from the fields to the packaging of the fruit, our production is artisanal and family-run, so we keep an eye on each stage of the process. We take care of the harvesting, and we carry out the smalling operations directly in the field. It is at this stage that the almonds are removed from the herbaceous part present around the brown shell. They are then dried in the sun, turned several times a day until they lose all their moisture. At that point the almonds are shelled by a machine that then separates the fruit from the shells. In the last stage, the almonds are sorted by hand. This is a very demanding operation, but it leads us to being able to offer the best possible product. Your adoption is 42 years old and its maximum lifespan is 50 years. For as long as you want to keep your adoption, and we can continue taking care of it, you can renew year after year. If your adoption stops producing for any reason, we will replace it with another, and guarantee you the delivery from the production of other units. Your almond tree produces an average of 4kg of almond products each season. You do not have to commit to ordering the entire harvest though. Each season you can decide how much you want to reserve, and you pay the maintenance cost according to that amount. This way you only pay for what you plan to consume, and we can offer any surplus harvest to others.
You can reserve between 2 and 4 boxes for the season, and then plan the deliveries for any of the delivery dates available in the shipment calendar. Shaped like a flat ellipse with a typical, elegant point, it has small pores on the shell while the large seeds are rough, homogenous and leather-coloured. The aromatic notes are round yet delicate, with a slightly bitter aftertaste. The almonds are already roasted in the oven to enhance their flavour and preservation, then later vacuum-sealed for shipment. The almonds can be stored for 12 months after shelling. For optimal storage, we suggest storing the almonds in one or more hermetically sealed glass jars, away from heat sources, in a cool, dry place. We shell the almonds periodically to be able to offer a fresher and crisper flavour in the fruit. Our product is a 100% artisanal, the almonds are carefully selected by hand, then packed in a bag and labelled by hand. The __Almond flour__ is produced by peeling and roasting the almonds, then they are finely ground to a powder, an excellent raw material for making sweets such as almond paste. The __100% almond cream__ is easy to spread, with an intense, slightly sweet yet sugar-free flavour, ideal for breakfast and snacks, and excellent on yoghurt or ice cream. When will you receive it?
We harvest our almonds at the end of the summer, during the month of September. Then we dry them naturally for 3 to 5 days; this is very important for the almonds to retain all their properties. It is therefore a very laborious process to which we devote several months. You can receive your almonds between July and October.
