Adopt vines from the farm "Fattoria Lavacchio" in Pontassieve (Italy) and receive your harvest in the form of Chianti wine Rufina at home. Faye will take care of your adoption and take its picture. Also, you will be able to download the adoption certificate and, if you wish, plan your visit to the farm. You do not enter into any long-term commitment: Although your adoption will be renewed automatically, you will always be informed in advance and may decide to cancel your adoption at any time as long as the preparation has not yet begun. These wines were tasted by a group of professional wine tasters that collaborate with CrowdFarming, and was rated 88 out of a possible 100 points, on average.
Adopt vines that we cultivate under the Organic Farming regulations of the European Union since 2000. During the process of adoption you can choose a name which we will use to identify your vines. You will adopt 6 vines of the varieties Sangiovese, Merlot or Syrah grown in the Chianti Rufina wine region (Northern Tuscany). Sangiovese is the major Tuscan red grape variety that derives its name from the Latin *sanguis Jovis* “the blood of Jupiter” and is the main grape variety on our farm. Its origins are still not entirely certain, but it was mentioned for the first time around 1500 by a Florentine agronomist. In order to rebuild biodiversity, to limit the spreading of diseases and because of the dual exposition of our vineyards, although 80% of our vineyards are of different clones of Sangiovese grapes, we have planted several other local grape varieties as well as international ones, such as Merlot and Syrah. Merlot has French origins while for Syrah the origins remain debatable. The Merlot vines were planted in the 90’s whereas the Syrah were planted in 2000 and 2002. These grapes contribute to adding extra spice to the fruitiness of Sangiovese and perfectly complete our wine selection. Our vineyards are situated 450 meters above sea level, on the ridge of the hill of Montefiesole, facing south-southeast for the Sangiovese and Syrah and facing north for the Merlot. They grow on rocky soils with a high concentration of limestone, which potentially makes for elegant wines with forceful aromas. Our vineyards have a planting density between 4500 and 6800 vines per hectare and the chosen pruning system is mainly guyot. In the vineyards we use only organic substances and neither pesticides nor chemical fertilizers. We ask nature for cooperation: we use the natural environment to enhance productivity, leguminous are planted to fix nitrogen within the soil, insect predators are encouraged and varieties are alternated. The grapes are carefully selected through green pruning and green harvest as well. They are manually picked and the yield per vine is very low, ranging between 1,2 and 1,5kg. All our wines derive from natural fermentation, i.e. without added yeast, and are produced with very little sulfites (one third of the admitted amount in organic regulations). The limited production imposed by organic cultivation guarantees, above all, a better quality year after year. Wines are bottled only those years in which they reach the quality level we seek. Our wines have a particularly long shelf-life. They combine their natural elegance and a complex bouquet with a great character and personality. They have received prestigious national and international reviews such as Decanter, Merum, Vinum, Veronelli Italian wine guide and the press has unanimously recognised that our wines have their own place in the gamut of Tuscan wines. Our current selection derives from a thorough experience in the vineyard and cellars which allowed us to maximise the uniqueness of Sangiovese and enjoy its cherry fruit as well as characterizing the more international varieties like Syrah and Merlot which adapted to the microclimate of our land. The productive life of vines is around 60 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your vines dies, we will replace it with no additional cost and assuring the delivery of your harvest from others.
Each season we will send you a box with: 2 x __Cedro Chianti Rufina DOCG (equivalent to QWPSR) __ (bottles of 75 cl) 2 x __Cedro Riserva Chianti Rufina DOCG (equivalent to QWPSR)__ (bottles of 75 cl) 2 x __Fontegalli Red PGI Toscana__ (bottles of 75 cl) In the box you will be receiving a selection of our most classic wines from Sangiovese, named after the pluri-secular Cedar tree which is the symbol of our winery. Super Toscanos (super Tuscans) are fine red wines made from international grape varieties. Another distinctive feature is the ageing in barrels. These wines therefore differ from the DOCG "Chianti" or "Chianti Classico" wines precisely because of their blend or methods of vinification and ageing. The natural balance and ancient traditions are the source of our wines that have great personality and that express the characteristics of our wine region (Chianti Rufina), also defined as “the highest of the Chiantis” and I am so excited to share them with you. __Cedro Chianti Rufina DOCG (equivalent to QWPSR) __ This wine is produced essentially from Sangiovese grapes grown in vineyards planted in the 90’s. After careful destemming of the grapes, fermentation and maceration occur at controlled temperature in stainless steel tanks for about 10 days with several pump-overs and delestages. This wine is aged in French oak barrels for about 18 months. It shows a good density and a pretty garnet-ruby color. Earthy notes of forest floor and bramble open the bouquet. Moderately toasted notes of spice and leather appear, giving a great sense of fullness with crispy acidity at the finish that really expresses the Chianti Rufina wine region. It is an easy wine that complements all food, any time. Serve at 18° C. __Cedro Riserva Chianti Rufina DOCG (equivalent to QWPSR)__ 90% of Sangiovese and 10% Merlot from vineyards planted between 1978 and 1981 are the perfect ingredients to create a Riserva of great character and complexity. After harvested, the grapes are carefully destemmed. The fermentation and maceration are achieved at a controlled temperature in stainless steel tanks for about 15 days with numerous pump-overs and delestages. The wine matures in oak barrels for about 18 months, then in French oak barrels of 35 hl for another 18 months. Its color is a deep ruby red. The nose is well balanced with elements of spice and dark fruit that build in momentum. It is full-bodied with a predominant cherry flavor and touch of cassis. The wine spreads thickly and smoothly over the palate with a pleasing sense of heft and density that is capped by fresh acidity. In its early years this wine is complemented with all dishes and when matured, it pairs nicely with roasts, wild game and cheeses, so make sure you keep one for ageing. Serve at 18-20° C. __Fontegalli Red PGI Toscana__ Fontegalli is the name of the well from which we get our water. As water, the source of life and the element of absolute quality, this wine represents our search for purity and quality without compromises or limits. The result is a wine of great elegance and intensity, capable of fascinating even the finest palates. It is produced from 60% Merlot and 40% Syrah. After careful destemming of the grapes, the fermentation and maceration are achieved at a controlled temperature in stainless steel tanks for about 25 days with constant pump-overs for high extraction. It has a deep plum shade and a velvety texture. It has a rich and complex palate with fantastic length, with fruity concentrated overtones of blackberry and leather, vanilla and oak. The finish is long and persistent. It pairs best with game and matured cheeses. This wine is particularly adapted for ageing but is appreciated at all its stages of maturation. Serve between 18 and 20°C. In case of sedimentation on the bottom of the bottle, do not worry! It is natural as our wines are unfiltered and not refined. All our wines are natural so can be sensitive to temperature variations. It is best to store them horizontally in a cool place. If you don’t have a cellar, ideally look for a place where temperatures are cool (possibly under 16°C) and constant. When will you receive it?
After the ageing period in oak barrels, the wines are bottled to keep all their freshness and integrity. The wines are then refined in bottles for at least 12 months and are released only when ready to drink. We send out the wines in March, so we are sure the wines have settled and can express themselves at their best.
