The project

Adopt vines from the farm "Fattoria Lavacchio" in Pontassieve (Italy) and receive your harvest in the form of organic Sulfite-Free red wine Chianti Sangiovese DOCG Toscana at home. Faye will take care of your adoption and take its picture. Also, you will be able to download the adoption certificate and, if you wish, plan your visit to the farm. You do not enter into any long-term commitment: once you receive your harvest and you enjoyed the experience, you may decide to renew and extend the adoption. These wines were tasted by a group of professional wine tasters that collaborate with CrowdFarming, and was rated 90 out of a possible 100 points, on average.

What do you adopt?

Adopt vines that we cultivate under the Organic Farming regulations of the European Union since 2000. During the process of adoption you can choose a name which we will use to identify your vines. You will adopt 4 young Sangiovese vines grown in the Chianti Rufina wine region (Northern Tuscany). Sangiovese is the major Tuscan red grape variety that derives its name from the Latin *sanguis Jovis* (“the blood of Jupiter”) and is the main variety on our farm. Its origins are still not entirely certain, but it was mentioned for the first time around 1500 by a Florentine agronomist. Our vineyards are situated 450 meters above sea level, facing south-southeast. The soils bear a high concentration of limestone, which potentially makes for elegant wines with forceful aromas. Our young vineyards have a planting density between 4500 and 6800 vines per hectare and the chosen pruning system is spurred cord. In the vineyards we only use organic substances and no pesticides nor chemical fertilizers are employed. We ask nature for cooperation: we use the natural environment to enhance productivity, leguminous plants are planted to fix nitrogen within the soil, insect predators are encouraged and varieties are alternated. The grapes are carefully selected through green pruning and green harvest as well. They are manually picked. The yield per vine is very low and ranges between 1,5 and 2kg. Each vines bear an average of 4.5l of organic Sulfite-Free red wine Chianti Sangiovese DOCG Toscana per season. All our “Puro” wines derive from natural fermentation, i.e. without added yeast, and are produced with no added sulfites. The limited production imposed by organic cultivation guarantees, above all, a better quality year after year. Wines are bottled only those years in which they reach the quality level we research. Our sulfite-free wines have a long shelf-life and the press has unanimously recognised that our sulfite-free "Puro" Chiantis have their own place in the gamut of Tuscan wines in spite of the prejudice natural wines often receive. A quote from Monica Larner of The Wine Advocate (Parker’s Wine Guide) an American wine magazine and among the most important international wine guides: “As its name suggests, "Puro" puts an emphasis on fruit purity. The wine opens to a thick purple color and youthful aromas of pressed blackberry and raspberry followed by dusty chalk and mineral. Fattoria Lavacchio is among the first wineries in the Rufina area to practice organic and biodynamic farming. Hard work and investments have started to pay off and this boutique farm has shown impressive improvements to quality over the years.” The productive life of vines is around 60 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your vines die, we will replace them with no additional cost and assuring the delivery of your harvest from others.

What will you receive?

Each season we will send you a box with: 3 x __Puro Chianti DOCG__ (0,75l bottles) 3 x __Puro Riserva Chianti DOCG__ (0,75l bottles) In the box you will be receiving both of our Puro Chianti, the regular aged in stainless steel and the Riserva aged longer in oak barrels. __Puro Chianti DOCG (equivalent to QWPSR)__ This was the first step towards the realization of my dream to produce PURO ("pure”) wines! After being picked, the grapes are softly destemmed and the whole berries are placed in stainless steel fermenters where they will start fermenting and macerating on their skins with its very own yeast and at a controlled temperature for about 10 days. After the malo-lactic fermentation, which starts relatively quickly due to the absence of sulfites, the wine is decanted and stored at a temperature of 10°C. After maturing in stainless steel for at least 6 months, the wine is bottled to keep all its freshness and integrity and will be released, when ready to drink. The wine opens to a thick purple color and youthful aromas of violet and freshly pressed cherries. In the mouth it is soft, chewy and fruity with a good mineral finish. The style reminds of a Novello, but with the difference that PURO is totally natural. For this, it is an easy drinking and immediately approachable wine that matches perfectly any food, from starters to dessert (especially dark chocolate). Serve at 16-18°C in winter and 12°C in summer. __Puro Riserva Chianti DOCG (equivalent to QWPSR)__ After the realization of PURO, the first Chianti without added sulfites, I wanted to demonstrate that even without them wine can age. In the Riserva version the wine is aged at least 12 months in oak barrels. This wine also opens to a thick purple color and aromas of moreno cherry syrup. The mouth is soft and fruity with evident notes of vanilla with a dry and long finish. It pairs nicely with roasts, wild game and cheeses. Serve at 16-18°C. Our PURO Chianti are made from 100% Sangiovese grapes, carefully selected and hand picked as it is important that the grapes are ripe, healthy and pristine. The wine is fermented in stainless steel vats, without the addition of sulfites, yeasts or tannins at any phase. The production of this wine is a balancing practice: maintaining the purity of the grapes without using chemicals is not easy, but possible, and we are ready to take some risks in respect of the health of our consumers. The sulfur as an antioxidant and antibacterial is replaced physically and not chemically, with low storage temperatures, extraction of polyphenols and frequent checks. As the bottle is opened, especially if served chilled, you may perceive a slight sensation of fizzynes. This is the residual carbon dioxide that naturally occurs and fills the gap between the wine and the cork and protects the wine from oxidation. Just allow it to open in the glass before drinking. In case of sedimentation on the bottom of the bottle, do not worry! It is natural as our wines are unfiltered and not refined. All our wines are natural, thus they can be sensitive to temperature variations. It is best to store them horizontally in a cool place. If you don’t have a cellar, ideally look for a place where temperatures are cool (possibly under 16°C) and constant. When will you receive it?

After the ageing period in stainless, for the Puro, and oak barrels, for the Puro Riserva, the wines are bottled to keep all their freshness and integrity. The wines are then refined in bottles for at least 12 months and are released only when ready to drink. We send them out in June, so we are sure the wines have settled and can express themselves at their best.
