You adopt vines from our farm in Bollène (France). The cultivation here is certified as organic by the European Union since 2014. During the process of adoption you can choose a name which we will use to identify your vines. Adopt three Merlot vines. It is a Bordeaux grape variety, and it is the 3rd most cultivated in France (after Grenache and Carignan). Its name comes from 'blackbird' because these little birds really appreciate the grains of this grape variety. Even if it is not a grape native to our region, it has adapted very well to our loamy soils. We grow it because the wine made from Merlot has aromas of red fruit and plums and is slightly spicy. It is a grape variety that also produces a lot (7 to 8 bunches per vine, compared to 6 to 7 bunches for other grape varieties). For the vinification of Merlot, we carry out a traditional in-tank fermentation, with a marc cap. A marc cap is made up of all the physical elements of the grape (skin, stalk and seeds). Twice a day, we run the grape juice through this marc cap, which allows the juice to soak up whatever is in that layer. This is called 'reassembly'. Fermentation releases a lot of heat, and a good vinification must be carried out at between 15°C and 30°C so that the freshness of the fruits is preserved. This is why it is important to control the temperature. For this, we use a water belt system, which circulates around the tanks. Your adoption is 24 years old and its productive life is around 50 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your adoption dies, we will replace it with no additional cost assuring the delivery of your harvest from others. Your vines produce an average of 3.6kg of organic grapes each season. With this amount we can produce around 2.25l of organic red wine Merlot PGI Méditerranée.
Each season we will send you a box with: 3 x __red wine “Le Merlot” 2020__ (0.75l, bottle) The Merlot is a wine with a beautiful ruby colour and purple reflections. It is a tannic and full-bodied wine with aromas of berry jam. We advise you to drink it with starters and grilled meats. It also goes very well with winter dishes, meats in sauce and cheeses. It can be served chilled in summer and between 17°C and 18°C in winter. This wine can be aged for 3 to 4 years. Store the bottles in a dark place, at a temperature of between 12°C and 18°C. When will you receive it?
The grapes are harvested at the end of August and throughout September (depending on the year and the grape variety). As it takes some time to make wine, the wine you receive was already harvested one or more years ago, depending on the vintage for the vine you adopt.
