The Farmer Carlos will take care of your adoption and take its picture. Also, you will be able to download the adoption certificate and, if you wish, plan your visit to the farm. You do not enter into any long-term commitment: once you receive your harvest and you enjoyed the experience, you may decide to renew and extend the adoption.

What do you adopt?
Adopt 2.5 or 7.5 m2 of a saffron field that we cultivate under the Organic Farming regulations of the European Union since 2020. Join our project and we will share with you the saffron from the land of Don Quijote with La Mancha PDO saffron that we harvest every season. Saffron has been used throughout history for its medical properties, colouring power and pleasant aroma. It is said that saffron may have been used by the Egyptians for embalming or mummification purposes as early as 1000 B.C., or later as a shroud dye for those shrouds in which the mummies were bandaged and wrapped in. Centuries later, saffron was an important dye in ancient Greece and Rome, it is said that the streets of Rome were littered with saffron when Nero entered the city. Although there are references prior to the cultivation of saffron in Spain, it is believed that its cultivation did not take hold in Castile La Mancha until the end of the 9th century, when it was introduced by the Arabs, being from its beginnings a product monopolised by the upper Andalusian bourgeoisie. During the month of September we plant the bulbs into the soil, that has been previously prepared with worm humus adding valuable organic matter. Towards the end of October the first flowers begin to appear, which we then will be harvesting dailyfor approximately 20 days. The same day we harvest and peel them to extract the strands that we then dehydrate, removing up to 85% of humidity in order to preserve their qualities. This way, after many long days, it is transformed into a spice and we can leave it stored to be packed according to the orders we receive. Saffron is a unique spice that brings color, aroma and flavor to your dishes, but it is also a great flavor enhancer that will give your dishes a distinctive touch. It can be used for both salty and sweet recipes. It can also be drunk with your infusions such as tea or coffee. There are several techniques to use for maximum benefits. Whichever one you use, we ALWAYS recommend crushing the strands to facilitate the extraction of their active ingredients. In 2016 we began the transition towards organic farming and from 2020 our products can be labelled with the eco-label. From the heart of La Mancha, we open a window to the world to share a piece of our culture. The production from one saffron field can vary each season, depending on the weather conditions. During the adoption process you can determine the quantity you wish to reserve.
What will you receive?
We will send you the box you have chosen in the adoption process. __Content of the small box: 2 grams of saffron__ __Content of the big box: 6 grams of saffron__ We will send you the saffron in a metal box to protect it from knocks and avoid crushing the strands. It is important to keep it in a dry place, away from direct light and consume it during the year. Our metal container is ideal for the safe transport, but for long time storage we recommend using a container with an airtight lid to protect its aroma. The saffron that we send you is already dehydrated, so its does NOT have to be heated or dried before use. __Ways of use: __ The infusion at controlled temperature is the method with which you will extract 100% of the active ingredients, however, it is also the one that requires greater preparation. Give the the desired amount of saffron (previously ground or at least crushed) into an oven dish with water. It will take 4 hours in the oven at a temperature of 65ºC (from that temperature the aromas evaporate, so we recommend not to try to speed up the process by increasing the temperature) to get the desired results. Another technique that will serve you perfectly and is simpler and more affordable, is to grind the saffron in an electric grinder. The resulting powder is applied directly to the stew during the last 8 - 12 minutes of cooking time.

My name is Carlos Fernández and throughout my professional life I have experienced several important changes. Before devoting myself to organic farming I had been working in logistics and international trade. Constant traveling, and a high level of stress were my daily reality. A reality that did not allow me to share time with my family or to use my productivity on a project that really fulfilled me. Change and betting everything on obtaining a unique product like our saffron from La Mancha, may seem very risky, but it makes sense when you discover the added value of the relationship with our tradition, its cultural implications and the opportunity to practice agriculture without damaging the environment. This project is an example of how a millenary crop, one that is very labour-intensive and hardly mechanisable, can offer a sustainable way of life in the 21st century. Its cultivation respects the environment and helps rural areas, prone to depopulation, to survive thanks to new collaborations, synergies and associated technologies emerging. We are a family-owned business in which my mother, my brother and I have participated from the very beginning. I am responsible for the general management of the company, but my particular focus is marketing and major operations. My mother manages and prepares the orders and my brother is responsible for communications. At certain times of the year, when the workload is quite high, such as for example at harvest time, temporary workers are hired, up to approximately 50 employees, all under contract and mainly the same workers year after year. This fact makes the work more convenient and familiar.

Our farm belonged to our grandparents since the beginning of the 20th century. Historically it was used for vineyards, but for a few years now, we have focused on the cultivation of saffron in dry land. Our farm is called La Casita de Genaro and it is located on the outskirts of a town called Villarrobledo, in the heart of La Mancha. We are very grateful for what nature brings to us, and do not punish the land or water with pesticides or herbicides. As only soil amendment we apply rainworm humus a few weeks before planting to maintain a high soil organic matter. We obtain this singular spice in a very artisan way, the same way it has been done for centuries. We take care of all the processes manually and we give them great care. Our project has, among others, firm ties to our natural, cultural and traditional environment. At Azafrán Carmín dryland farming is undertaken, which is why our plants depend on each year’s rainfall. For weed control no synthetic products or herbicides are used. Weed growth is controlled in order to avoid competition with saffron, and by ploughing several times a year the seed germination of many weeds is prevented. Yet, in years with lots of rain, such as 2020, the weeds have flourished and in late May a weed-whacker was used leaving the remains on the field. In September, a rotovator was used, afterwards adding the compost from the clearing into the soil, and in this way providing the crop with organic matter. This method makes it unnecessary to apply any alternative pest control practices. The production of our saffron generates practically no waste or any spoilage. If any vegetable residue is generated, it is incorporated into the crop. We count with 40,000 m2 of which 15,000 m2 are used for cultivation. The rest is white land that we are conditioning year after year to increase our plantation. From our saffron field, we lose sight of the immense plain in which we find ourselves and every November we witness the spectacle of lively contrasts of purple tones of our crocus roses. A unique and fleeting spectacle offered by these roses, which appear at dawn and wither at dusk. In 2020, we began with the construction of a new warehouse from where the saffron will be prepared from 2021 onwards, equipped with solar panels which supply medium voltage electrical backup to the installations. Our future objective is to obtain complete energy self-sufficiency.
