You adopt vines from our farm in Vélez-Rubio (Spain). The cultivation here is certified as organic by the European Union since 2016. During the process of adoption you can choose a name which we will use to identify your vines. The Bodega Palomillo white wine is a coupage that blends two varieties of white grapes: Vermentino and Chardonnay. The Vermentino variety is a white grape that originates from Italy, grown in Sardinia since the 14th century. The Chardonnay variety is a green-skinned grape from Burgundy in France where it has been cultivated since the 10th Century. The Chardonnay grape is very neutral and one of the most widely planted varieties in the world. The combination of these two varieties makes a truly exquisite wine. This wine has been awarded 85 points in the Peñín Guide. The cultivation is carried out organically in the Sierra de las Estancias, a sparsely populated region in the Southeast of Spain. Until the beginning of the 20th century it was well renowned for its excellent wine production, ended sadly by the phylloxera plague which dried out the grand majority of the vines. Its slate soil and Mediterranean climate, with cold winters and hot summers, favours the production of excellent quality wines and we are recovering its wonderful reputation with hard work and hope for our winery. We currently produce 6,000 bottles of Crianza wine per hectare. The vines are grown on trellises on dry land, although if you come to the farm you will see that we have installed an emergency irrigation system to save the vines in case of drought. We only had to use it once when the vines were very young and barely had roots, we hope that it will not be needed again. Your adoption is 5 years old and its productive life is around 50 years. For as long as you want to keep it and we can continue taking care of it, you can renew your adoption year after year. If your adoption dies, we will replace it with no additional cost assuring the delivery of your harvest from others. Your vines produce an average of 6.5kg of organic grapes each season. With this amount we can produce around 2.25l of organic white wine Joya del Mediterráneo, 2020.
Each season we will send you a box with: 3 x__ Organic white wine "Joya del Mediterráneo", 2020__ (0.75l, bottle) __Visual__: light wine, medium intensity, lemon yellow in colour with traces of green. __Smell__: Clean nose, medium intensity, dominant primary aromas. Highlights the stone fruit, peach, with a background of pineapple and vegetable tones that provide freshness. __Taste__: Dry in the mouth, medium acidity and medium-to-high alcohol content, medium bodied with fruit flavours and herbal and vegetal notes with a citric background and medium finish. __Winemaking__: Harvesting of the best clusters selected manually. The grapes are processed mechanically in the winery to obtain the must. Once filtered, it is left to ferment with neutral yeast to maintain the character of the grape. when fermentation is finished, the wine is clarified with pea protein and filtered again to leave the wine free of suspended matter. It is then bottled and labeled. __Sealing__: Natural cork stopper. __Storage__: Between 18-20°C. Store horizontally if possible and consume within 2 years to enjoy in optimal condition for consumption. __Pairing__: This is a wine that needs no accompaniment, but by pairing it with seafood, fish, ceviche or white meat carpaccio we can enjoy it with twice the pleasure. When will you receive it?
The grapes with which this wine was made were harvested at the end of the summer of 2020. It was bottled in the summer of 2021 and we can make two shipments a year, one in winter and one in summer.
