Adopt a cow from the flock of "AlterMonts" farm in Chazelles-sur-Lyon (France) and receive your organic raclette cheese at home. Adrien will take care of your adoption and take its picture. You will also be able to download the adoption certificate, and if you wish, plan your visit to the farm. As the production coming from one cow is big, the adoption is shared among various people. If you wish to have a bigger share, you may adopt more than once. You do not enter into any long-term commitment: Although your adoption will be renewed automatically, you will always be informed in advance and may decide to cancel your adoption at any time as long as the preparation has not yet begun.
You adopt a cow from our farm in Chazelles-sur-Lyon (France). The livestock farming and the produce are both certified as organic by the European Union as of 2020. We are offering you the opportunity to adopt a cow from one of our 4 farms. There are 3 different breeds of cattle among the 200 cows on our four farms. The Montbéliarde, a breed of dairy cows with a red pied coat and a white head from the Franche-Comté region, mixes hardiness and milk production. The Prim Holstein, a dairy cow breed with a black pied coat from northern Europe, is symbolic of rather industrial dairy production. However, we have selected and adapted it to our breeding practices. The Jersey breed of dairy cow has a plain tan coat, originates from the island of Jersey, and produces milk that is especially rich in fat and protein. All our cows are born and raised on our farms, fed with the fodder we produce and put out to pasture for at least 8 months of the year. For the remaining 4 months they are in stalls where they are allowed to move freely, to spend the winter. The 4 farms that make up the AlterMonts cheese factory are engaged in organic farming. The terrain represents a little more than 250 hectares on which pesticides and chemical fertilisers are never used. To produce milk, the cows must calve. Their first calving takes place at around 28-30 months of age, and we keep the dairy females on our farms. They join the herd later while some of the other calves are bred for meat and directly sold to meat producers around us. The calves that we cannot raise are sold at 3 weeks to join the beef industry. Cows have a lifespan of about 10 years, but some stay longer on the farms, and sometimes we are forced to separate them from others before they are 10 years old. These then go to the beef industry as well. Some are sold as minced burger meat directly to local consumers. Others leave for a more protracted process chain (with several intermediaries) while remaining in the region to limit the animals' movements. Our flock has an average age of 5 years and the maximum lifespan of a cow is about 12 years. For as long as you want to keep your adoption, and we can continue taking care of it, you can renew year after year. If your adoption stops producing for any reason, we will replace it with another, and we guarantee your delivery from the production of other units. Your adoption produces an average of 6000l of milk each season. With this amount we can produce around 600kg of organic raclette cheese. 194 CrowdFarmers will share the adoption, and each one will receive a box containing 3kg of organic raclette cheese.
Each season we will send you a box with: 1 x __Organic raclette cheese__ (approx. 3kg piece, packed in food wrap) Raclette is a pressed raw-milk cheese with a minimum maturing period of 4 months. This cheese has a smooth and soft texture with some bubbles that are created during the maturing process. With its brown/orange rind and 4 months of maturing, this cheese combines smoothness and character. The Raclette is the star of melted cheese! You can enjoy its flavours with friends around a classic or traditional raclette machine (for the half-raclette!) accompanied by vegetables and charcuterie (without forgetting the gherkins!!). A nice melted slice on a simple cracker is the perfect companion to a small salad. But you can also enjoy by simply biting into a fresh slice of raclette like any other cheese from the cheese platter! Just note that since our raclette is made with whole milk, it may release a little fat if melted too long. AlterMonts is a small artisanal cheese dairy in which all our products are created by hand. They are made in the dairy from the milk we collect on the 4 farms and to which we add ferments, calf rennet and salt. They are also refined on-site in our cellars. For this purpose, they are brined (rubbed with a saltwater solution) and turned several times a week. Ripening takes place on spruce planks. We also cut and package our cheeses ourselves. For this last step we need to use food wrap to ensure the cheese is well-preserved until you receive it. After you receive them, these cheeses will keep very well in your refrigerator for up to 3 weeks (leaving them in the wrapping so that they do not dry out), but we advise you to taste them at room temperature so that they reveal their best aromas. They can also be stored in the freezer for up to one year.

Raclette is a rather seasonal cheese (even if it can be enjoyed all year round!) that we offer twice in winter - a first delivery to face the long nights of the beginning of winter in January and another in February so you have something to welcome you back from your outings in the snow! As these 2 offers are independent, there is no obligation to take the 2 deliveries, even if we hope you will want to!
