You adopt 20m² of ein Buchweizenfeld from our farm in Busca (Italien). The cultivation here is certified as organic by the European Union as of 2016. Just a few kilometers from Cuneo, one of the most important cities in Piemonte, is land that is cultivated in synergy with the landscape, using sustainable, organic and completely GMO-free methods. Our organic flours comes from this land. These fields are cultivated by our skilled farmers, allowing the production of several tons of grains that are stored just a few moments after harvesting. The time that passes from the artisanal production of the pasta and flour to the packaging of the finished product is very minimal. This is the short supply chain of our PASTA NATURA. Fagopyrum esculentum, better known as buckwheat, is an annual herbaceous plant. Biologically it belongs to the Polygonaceae family and is a pseudo-cereal. This plant originated in Asia, and early sources tell us that it came from Siberia and Manchuria. It arrived in Europe by Russia and was first widely cultivated in Germany and France. From the 16th century onwards it also appeared in Italy and was cultivated mainly in the regions of north of Italy. This herbaceous plant has a small fascicled root system, which means that its roots prefer to explore the soil horizontally rather than vertically. Its stem is cylindrical in shape and at the apex it has a beautiful flower that changes color during flowering: from green to red. Its leaves are oval-shaped and pointed. The plant can reach a height of up to 1.5 m. Pollination can be entomophilous, by bees, or anemophilous, by the wind carrying pollen from male flowers to the flowers of female plants. This plant is a melliferous plant, i.e. it attracts bees and other insects. The plant grows well in cool environments, fears heat and hates lack of water. The plant's growth slows down when temperatures exceed 30 degrees and when they fall below 8 degrees. For these reasons it is grown in early summer, as the warm temperatures help the plant to develop in the first months of its life and the late summer rains provide it with the right amount of water. It prefers to live in soils rich in organic matter and does not like clayey, moist soil. The plant cycle is very short and can last from 60 to 100 days. It is generally sown in early summer and harvested at the end of September. Its short cycle allows farmers to grow it in rotation with the most common winter cereals (wheat). About 60 kg of seeds are sown per hectare of land. The production yield is around 1500-2000 kg of grain per hectare of cultivation. Your Buchweizenfeld produces an average of 3.5kg of Bio-Buchweizen each season. With this amount we can produce around 2.5 kg of Bio-Buchweizen-Pasta.

If it doesn't cook “al dente” and isn't rough and porous enough to bind with the sauce, it can't be called pasta. Our pasta is gluten-free and therefore suitable for people with coeliac disease. Next to the organic certification, our pasta is further certified as organic by USDA ORGANIC and as vegan by VEGANOK. Our organic buckwheat pasta adapts very well to all kinds of sauces and condiments and is perfect for those who want to vary their diet. For a vegan recipe: season pasta with celery sticks and sun-dried tomatoes. For lovers of spicy flavours, we suggest a sauce of peas, saffron and chilli pepper. A tasty and easy to make recipe is the classic cream and ham, which with the addition of the taste and colour of buckwheat immediately takes on a more innovative appearance. If you want to make sure you have bought a good quality pasta, always check the turbidity of the cooking water: if it remains transparent and does not cloud, it means that the starch contained in the pasta has not escaped during cooking. The longer the starch is retained in the protein lattice, the tougher the pasta will be! Store the pasta in a cool place away from heat sources. If vacuum-packed, it can last up to 3 years. This package allows the separation of the two materials that compose it (paper/plastic), so that the materials can recycled.
